Default crunchy chickpea snack - yum!

Hey there!

I just made the crunchy chickpeas from the GI diet and really like them, so thought I'd share. My dad isn't a fan, mom is in the middle, but I think they're a good alternative to some unhealthy snacks.

Recipe:

2 cans (540) chickpeas
2 tbsp olive oil
1/2 tsp salt
pinch of cayenne pepper (I left this out 'cause I don't like it and replaced it with a little paprika)

Heat oven to 400. Drain the chickpeas. In a bowl, mix the chickpeas with the olive oil, salt and cayenne pepper. Spread chickpeas on a baking dish so they're flat. Cook for 45 minutes until golden brown and crunchy. Make sure to shake the pan every now and again.

lilme,

These sound pretty good. Do you think they would be good on a salad replacing croutons? Maybe sprinkle a little garlic powder on before you bake them. That's what I've been missing lately -- croutons.

Hmm ... never thought about using them as croûtons ... it'll give you the crunch without the carbs, so I say go for it!

I've made them with cinnamon and splenda sprinkled before baking and they were pretty good.

Yum. That sounds good. I think I'll make a batch of both cayenne and cinnamon and splenda.

These do sound good... for those that like hummus, you could probably spice them with a little lemon, garlic, cayenne and paprika and get a nice hummus flavored crunchy snack
