My children are dip fiends and i find it's a great way to get veggies into them. We go through HUGE amounts of hommus in our household and I'd like to expand the dip range from just that. We are a dairy free household, but I should be able to adapt recipes okay. I used to have a fabulous dip book, but I lost it... Does anyone have any favourite dip ideas?

* 1 cup soft tofu
* 1 tablespoon Extra Virgin Olive Oil
* 1 small onion, chopped
* 3 cloves garlic, smashed and peeled
* 1 tablespoon Red Wine Vinegar
* 1 tablespoon chopped parsley
* 3/4 teaspoon salt
* 1/4 teaspoon pepper
Line a colander with several thicknesses of paper towel. Place tofu in colander and allow to drain 5 to 10 minutes to remove excess water.
Meanwhile, in medium skillet, heat oil over medium heat. Add onion and cook, stirring 8 to 10 minutes, or until golden. Add garlic and cook, stirring, 3 minutes or until garlic just begins to brown. Remove from heat.
Place sautéed onions and garlic in mini-food processor and process until almost smooth. Add drained tofu and process until smooth. Add vinegar, parsley, salt, and pepper and process 2 to 3 seconds until just blended.

INGREDIENTS
16 ounces can cannellini beans, drained and rinsed
1 cup packed basil leaves
2 teaspoons nutritional yeast flakes
2 teaspoons water
1 teaspoon garlic, minced
2 teaspoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
8 ounces asparagus, stalks trimmed
8 ounces sugar snap peas, strings removed
3 cups cucumber, peeled, deseeded, and cut diagonally into 1/2 inch slices
2 cups carrot, peeled, and cut into 1/2 inch sticks
2 cups radishes, ends trimmed
2 cups orange or yellow capsicum, destemmed, deseeded, and cut into 1/2 inch strips
METHOD
In a food processor or blender, combine the beans, basil, nutritional yeast, water, and garlic, and blend well. Add the olive oil, salt, and pepper, and continue to process until smooth. Transfer to a glass bowl, cover, and chill for 1 hour to allow the flavors to blend.
Meanwhile, blanch the asparagus in boiling water for 3 minutes. Remove asparagus from the water with a slotted spoon, immediately immerse in a bowl of ice water to stop the cooking process and to retain the bright green color. Blanch the snap peas in the same water for 1 minute, remove with a slotted spoon, and immerse in the ice water. Remove the asparagus and snap peas from the ice water, place on a towel, and pat dry.
Place the bowl of white bean pesto dip on a large platter, and alternating colors, arrange the vegetables around the bowl of dip.

they can be found at trader joes or whole foods. I am not sure if the local market would have them.. I would also say coconut could be used... it is more for texture

If your kids like hummus, they might enjoy the eggplant dip as well. It is basically made just like hummus, but you use purried roasted eggplant instead of the chickpeas.

1 tsp. ground cumin
2 cans chickpeas, rinsed and drained
3 tbsp. lemon juice
2 cloves garlic, put through a press
1/4 tsp. paprika
1/8 tsp. cayenne pepper
Blend all until smooth in food processor/hand blender. Season with salt & pepper to taste.
6 garlic cloves, peeled
2 1/2 cups broccoli
1 cup canned white beans (cannellini or navy), rinsed
1-2 tbsp lemon juice
Heat oven to 350, place garlic cloves into small custard cup sprayed with Pam and roast garlic until tender, about 30 minutes
Steam broccoli until tender, about 8 minutes. Process with beans, lemon juice and garlic. Good on toast pita or tortilla chips.
optional add 1/2 tsp crushed red pepper while processing, gives it a little kick.

Diamond in the rough - good idea about the eggplant! I love it, so hopefully the kids will too... it's quite easy to grow here, too.
April - ooh a yummy dip with brocolli - I definitely will have to try that one. It's difficult to find a really green dip and I've been trying to add more greens to our diet especially.
