Default DEESH76: I tried your high fibre bread...DELICIOUS! (recipe included)

Hey, cysters, you should all try deesh76's bread. So easy to make and so good. I am eating a toasted piece of it right now. YUM!

I added a chopped apple to mine, like she suggests. I can't wait to try blueberries. Also, as soon as the loaves come out of the oven, I take them out of the pan and wrap in very moist, clean dishtowels for about 10-minutes. This sort of "steams" them and makes the bread even moister. I do this with all breads that I bake.

Here's the recipe:

For regular bread I just eat a bread that is high in fibre (about 5grms per slice), made only with whole wheat flour, and no sugar. But I'm not doing a strict low carb diet. I am just eliminating white carbs and sugar.

But if you are looking for a bread recipe to have toasted in the morning then here is a recipe you might want to try. It is FANTASTIC. No sugar, no white flour, very high in fibre and vitamins. I eat it all the time and it does not seem to impact my blood sugars or weight loss. I just toast it in the morning and have it with a bit of no sugar added jam, or peanut butter.

You will need 2 regular size loaf pans or one that is extra long. It has no preservatives so it doesn't keep long. Freeze half of it until you are ready to eat it.

IRISH SEEDED BREAD

4 Cups Whole Wheat Flour
1 Cup Bran
1/4 Cup Wheat Germ
2 Tbsp Baking powder
1 TBSP Sesame Seeds
1 TBSP poppy seeds
1 TBSP flax seeds
2 TBSP flax meal (ground flax)
2 TBSP sunflower seeds
2 TBSP pumkin seeds
2 tsp cinamon
approximately 2.5 - 2.75 cups of milk (start at 2 cups and work up as needed)

Spray loaf pan with pam. (Remember, 1 long one or 2 regular ones)
Preheat oven to 350

Mix all dry ingredients in large bowl. Add enough milk to make a stiff dough, should be consistency of stiff porridge.

Place in pan(s) and bake for 1 hour or until loaf sounds hollow when tapped. Cool on wire rack.

Tastes really good if you add: 1/4 cup dried blueberries, or 1 chopped apple, or 1/4 cup chopped dried apricots.

Try it. You will be surprised. This recipe is really good, flavourful and moist, even though there is no sugar or fat in it.

Default Nutritional value

Hi all, I've been searching for a high fibre easy bread to make and this looks very good. Being me I've broken down the nutrutional value and here's what I came up with:

Per recipe (two loaves, value is for one loaf)

Fibre content: 53 g
Carbohydrate: 194 g
Fat: 28 g

If you have 12 slices per loaf it's per slice:
Fibre: 4 g
Carbo: 16 g
Fat: 2 g

Not too bad!

I've done some tweaking with the recipie as I couldn't find wheat germ (will substitute with rolled oats) and bought a pure bran fibre rather than wheat bran (all the fibre without any of the carbohydrates!) so will try this afternoon and say how it went. Also really like Rye flour so replacing some of the whole wheat with this.

Wow, is this bread a dense one? I think I may have stirred it too much in my food processer when adding the milk. It's a little um... chewy. But it's fantastic and absolutely delicious!

Here's what I did:

1 cup whole wheat flour
1 cup lite rye flour
1/2 cup pure bran (no callories, not wheat bran)
1/4 cup oat meal
1 tbsp baking powder
1/3 cup mix of the seeds
1 tsp cinnamon
1 3/4 cup soy milk (low fat, calcium enriched)

YUM!!

Yes, it is very dense! I think that's why I like it toasted as it "lightens it up" a bit. Really sticks to your ribs for sure. It's the type of bread that if you went to the traditional old timey prison and they fed you nothing but "bread and water"...well, this bread would probably make you gain weight instead of wasting away in the jail cell!

I really like your ideas. I love rye flour, too and will try your modifications. I remember I didn't have pumpkin seeds at the time but it was OK without them.

It would be fun to try putting some lightly chopped almonds in there. maybe with some raisins and increase the cinnamon for a sweet type bread. Yay for our California almonds and raisins!
