Default Diet Help & CrockPot Low carb style

My husband and I both need and want to lose weight. We just didn’t eat healthy at all and I’m sure in soda alone we could take in more carbs then we should have all day total!
I’ve tried researching online and while I have found some helpful links it seems the more I search the more confused I am. Id love to sign up for e-diets or weight watchers or something but unfortunately we do not have anywhere near the financial luxury of doing so.
Since I’ve read so much about low carbing here and just in general we decided to go mostly this route although we did stock up on some Slim-Fast which was on sale at walmart this week.
What I can’t figure out is how many carbs a day is a good goal. I know the diet diets have the phases like 1 being no carbs but I’m not sure we can do that again partly because of money issues but also because we have his parents and our daughter who of course also eat and cooking completely separate meals every night isn’t doable. Also when low carbing do I need to also count calories and fat? I know when I went grocery shopping this week it seemed a lot of the stuff that was marketed as low carb compared to normal had a bit more fat than I would have thought in it and things that I would normal consider diet stuff like healthy choice and weight watches/lean cuisine had a TON of carbs. It got all very confusing,,,Is there any help you can give and advice?

Also we just a crock-pot (well his parents did anyway) and I can’t seem to find to many low carb crock pot recipes. Anyone know any good ones!?

crockpots are awesome! i just bought one myself a couple months ago. ALl you do is put your meat in it in th emorning, put some seasonings on it, or a marinade if you wish, and put it on low and let it sit for 6-8 hours. i love to make c hicken in it, it always comes out nice and tender. try cooking it in salsa, that's a good one.

Take a look at the following cookbook: Fix It and Forget It Diabetes Cookbook. It's available @ Amazon.com for under $13. I just bought it and it looks like there are a lot of good recipes. It also includes the carb, fat, calorie, info on each recipe.

I 2nd clayclick on Fix It and Forget It Diabetes Cookbook. It's an amazing book!!!!!!!!!!!
I use my crock pot atleast 2 or even 3x's per/wk. The days that DH go to the gym after work I start the crock pot in the AM and then when we return home supper is done. Thank goodness since I'm STRAVING. I usually slow cook chilli, roast, chicken, beef stew. Going to try more receipes soon.
Chilli is amazing in the crockpot. Make enough to have left overs. The days following I have a taco sald (i.e letuce, tomatoes, red onions topped w/ chilli and then topped w/ a small amount of graduted cheese) or you can have chilli w/ nacho chips and dip the chips in the chilli. HMMMMMMMMMMMMM
