I am looking for some new dinner recipes. I am running out of things to cook & do not have the time to start being "adventurous" lol.
Normally I make things like - Cabbage rolls, stuffed peppers, meatballs, meat sauce's, lasagna, chicken/beef stirfrys, baked chicken, morrocan & paprika chicken dishes, stews, soups etc....but am getting tired of the same old, same old & It is so hard to find somethng new to make that DH likes...
He is very picky, he will not eat any, fish, cold cheeses, cooked tomatoes, mushrooms etc....SO I am very limited IMO.
Can you share some of your meals/ideas?

We are in a rut here too when it comes to home cooked meals. We are having a lot of wheat pizza these days. I bought several low-carb cook books on amazon and hope when they get here I will have some ideas to add
I just bought the Complete Idiot's Guide to Quick & Easy Low-Carb Meals and there is a cool recipe (haven't tried it yet) on page 67:
Tsatsiki (Greek Cucumber Dip)
1 cup plain yogurt
1 cucumber, 1/2 peeled and finely chopped and 1/2 cut into sticks
1tb chopped garlic
1tb olive oil
2tsp lemon juice
1/2 tsp ground black pepper
1/2 tsp salt
1 cup crisp raw snow pea pods, steamed, rinsed and cut into pieces
1 large celery stalk, rinsed, trimmed and cut into sticks
In a small container with a lid, mix yogurt, cucumber, garlic olive oil, lemon juice, pepper and salt. Place cut pea pods and celery in a large container. To serve, scoop up tsatsiki with vegetables.

Salmon Burgers with Lemon-Caper Mayo
4 (6 oz) cans pink salmon meat, drained, skin and bones discarded
3 scallions, roots and dark green tops removed, minced
1/2 tsp dried dill
2 tsp olive oil
1/2 tsp salt
1/3 tsp ground black pepper
3tb whole wheat flour
3tb unprocessed bran
Lemon Caper Mayo
Thoroughly chop salmon and combine in a bowl with all except flour, bran and mayo. Form into four patties. Spread flour and bran on a plate and roll burgers to coat. Heat a nonstick skillet over medium heat and cook for 3 minutes per side or until cooked and coating is crisp. Serve with Lemon Caper Mayo.
Lemo Caper Mayo:
1/4 cup mayo
1 tb small capers, drained and rinsed
1 and 1/2 tsp lemon juice
1/8 tsp dried dill
pinch ground pepper
So tonight I made this new side dish. I took the Rice a Roni Savory Whole Grains Spanish Rice and I put in some black beans. After it was done I put in some fresh diced up tomatos. It was SOOOO delicious.

Most of the time I'm limited in what I can cook, for my other half has a rough time with any products that contain soy or soy derivatives, or shellfish, grapes, raisins, ginger. Try to incorporate more fruits and veggies in dinners b/c South Beach taught me that there is greater benefit to less carbs like bread and potatoes and more of the other stuff.
So last nite i heated up leftover bbq burgers and bratwurst links - did include bread with the meat, but a small price to pay for the rest of the meal. When out of the oven i topped the burgers with a few slices of avocado. Side of stouffer's creamed spinach (who knows how bad the sodium content was, but took a single serving and split it two ways), and roasted vine tomatoes and garlic cloves drizzled with olive oil and sprinkled with oregano.
I made this for my dbf and friend and they both liked it a lot (It wasn't til afterwards that I told them it was a south beach recipe- my dbf doesn't like healthy things on principle). It's phase 1, so extremely low carb:
Pork Loin 1 boneless center pork loin roast (about 2lbs)
3/4 tsp salt
1/2 tsp black pepper
1tbs olive oil
sage and rosemary sprigs for garnish
Preheat oven to 350. Butterfly the pork loin. Sprinkle the top half of the loin with half the salt & pepper. Spreak the filling evenly across the loin leaving a 1/2" border along the edge where you made the first cut. Beiggining at the opposite edge, roll the loin uo to wrao the filling. Using kitchen twine, tie the loin every 1 1/2" to hold it's shape (I didn't have twine so I used toothpicks, and they worked fine) Rub the loin with the oil and sprinkle with remaining salt & pepper. Place loain in small roasting pan and place in center rack of oven. Roast for 1 hour, or until a meat thermometer reads 155 and juices run clear. Cut, garnish, and serve.
Makes 6 servings
