Default Do you Freeze you're meals?

What kind of stuff to do make up ahead of time? For me they dont need to be cooked... but ready to go. I hate the preparation of cooking... if I could get that part done in one day... then the rest would be easy.

So I've got the idea of stir fry, enchillada/taco, spaghetti... what else can be done. I want to be able to pull from the freezer and heat! lol

I love to cook... I love to have great food... but ummm I dont like cutting everything up... getting things prepared etc. I also have a slow cooker... I was thinking about utilizing that for days that I want a fresh hot meal!

Any and all ideas are welcome please bring a lot!

I do! I really like to cook, but don't seem to ever have time. My slow cooker is my best friend. I make just about everything in the slow cooker. I always make a big batch and do freeze the leftovers so I don't get tired of the same thing. Here's a few simple ideas:

1. Italian Chicken - Throw frozen chicken breasts in the crockpot and cover with Italian Dressing (I use 2 bottles of FF Wishbone, but you can use whatever you like.) Cook on low 8-9 hours or high 4 hours. Chicken is very tender and I serve with veggies.

2. BBQ Chicken. Same as above, but substitute favorite BBQ sauce instead of italian dressing.

3. Brown Sugar Meatloaf (this one is not especially good for us, but my DH and I love it, so I make it occassionally as a treat. We've even served for company and gotten rave reviews.)


1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 pounds lean ground beef
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion, chopped
1/4 teaspoon ground ginger
3/4 cup bread crumbs

Slow Cooker Instructions:
Mix all ingredients together, reserving 1/4 cup of brown sugar. Place mixture in slow cooker and top with reserved 1/4 cup brown sugar (note: I actually put all 1/2 cup in the mixture and top with additional, but of course, that adds calories). Cook on low 8-10 hours or high 4-5 hours.


Oven Instructions:
1 Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
2 Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
3 In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.
4 Bake in preheated oven for 1 hour or until juices are clear.


Makes 8 servings
