I'm spending far too much money buying hummus at the grocery store. Every time I've tried to make it (ok, once), it didn't turn out well.
I'm pretty adept in the kitchen but the perfect hummus recipe still eludes me. Ideas, tips, secrets anyone?

I don't use a formal recipe anymore because I'm used to making it, but here's what I do:
I put the following into my food processor:
* a can (or two, depending on how much I want to make) of garbanzos, rinsed and drained
* a few garlic cloves, sliced
* a generous tablespoon of tahini
* a drizzle of olive oil--I don't use much
* the juice from 1 lemon
Then I process it until it's smooth and stick it in the fridge. It's not too good the first day--it takes a while for the flavors to meld. The next morning, though, it's dynamite!

Kiko uses a similar recipe, but probably more tahini and sometimes lime instead of lemon (because in his country they don't have lemons often).

Dude! It's so awesome that you asked about hummus! I recently decided to give it a try and I'm hooked (and so is DBF-he recoiled when he saw it but when he tasted it he couldn't believe how good it was)! It's very expensive at the grocery store, like $3.50 for a small container, so I was thinking about making my own too. It's funny because I picked up this month's Prevention magazine and there's a recipe in there for it.
Hummus in a Hurry (from Prevention, March 2007)
Rinse and drain 1 can (16 oz) chickpeas. In food processor, combine with 3 Tbsp freshly squeezed lemon juice, 2 Tbsp tahini, 1 Tbsp olive oil, 1 tsp bottled minced garlic, and 1/8 tsp crushed red pepper. Process until smooth. Makes 8 servings.
I like that it can be fixed up in so many ways. Fresh parsley can be tossed in to brighten the flavour. Oil packed sun dried tomatoes, finely chopped, add a nice taste, too. And yeah, roasted garlic in hummus is really nice.

So here's my question: if you're trying to eat low-carb, what do you eat WITH the hummus? Any ideas? I know people say you can eat it with carrot sticks, but I find that completely unsatisfactory! I guess I could try pepper strips or celery or something.

It is really yummy with celery. You could spread it on lettuce leaves (might be weird but you never know) and add some meat for a wrap.
Could you share the recipe that you used? That would be a good place to start.
LOL - you want me to dig through my heaps of unorganized recipes?! What I tried was quite similar to the recipes posted here (thanks, everyone!) but I'm thinking that I might have put in too much olive oil and/or processed it too much. I'll just play around with amounts next time 'til I find the winner!
As for low-carbing and hummus, I load up with veggies. Pepper strips are great, celery is awesome. Radishes give a great flavour/crunch mix. I know I have to watch portion sizes with hummus since I could eat a ton of it at once.

I eat hummus with all veggies! I looove it with broccoli and also red peppers. Cucumbers are also really good. I also will buy whole wheat pitas sometimes and eat it with the hummus, I just watch the amount of pita I eat. If I'm not carefuly all the hummus and pitas will be gone!
