You could have all the veggies and meat cut up and ready in baggies to make stirfry. It would be quick and all the work would have been done already at home.
You could grill chicken on the campfire (if it has a grate) on tinfoil and make corn on the cob on the coleman stove.
We always do Hamburgers and Hotdogs, but thats not the most nutricious thing! Hey, your on vacation splurge a little!
You could have fruit salad made up ahead of time and have it with Sandwiches. Sandwiches are always quick and with whole grain bread, nutricious.
