Dr. Atkins Recipe (slightly altered) Hi Cysters:
I am low carbing right now and needed to make a dinner that both me and dh could enjoy (he isn't low carbing) so I had a look through dr atkins quick & easy diet cookbook and found this recipe. I made a few changes but it is YUMMYYY. I think this recipe is manageable for EVERYONE (it's easy to make and the ingredients can be found in US or UK, I will try to put the UK and US versions of ingredients together because I know it can be confusing. Anyways Enjoy!!!!!! It is called Creamed Chicken with Mushrooms (serves 2)
1 whole boneless chicken breast, cut into 1-inch pieces
1 teaspoon fresh thyme or 1/2 teaspoon crumbled dry thyme
salt and pepper to taste
3 Tablespoons butter
1 cup sliced mushrooms
2 tablespoons minced shallots *us or spring onions *uk
1/3 cup dry white wine
1/3 cup chicken stock*uk or bullion *us
1/2 cup heavy cream *us or double cream *uk
2 tablesppns chopped fresh flat leaf parsley (I don't like parsley so left it out but each to t heir own)
a few pieces of prociutto *us or normal bacon*uk (I added this myself as it wasn't in original recipe)
freshly grated parmesan cheese to taste (I added this as well)
season the chicken with the thyme, salt and pepper. heat 2 tablespoons of the butter in a skillet over medium-high heat until the foam subsides. Add the chicken (and bacon) and saute about 3 minutes, until light golden. Add the mushrooms stirring occassionally, for 2 mins. Remove the chicken-bacon-mushroom mixture from skillet and reserve.
Now add the remaining tablespoon of butter to the skillet and saute the shallots, stirring occasionally for 2 mins. Add the wine and stock to the skillet. Bring to a boil, lower the heat, and simmer for 5 mins making sure to scrape up any brown bits from the bottom of the skillet. Add the cream and gently simmer for another 5 mins. Return the mushroom and meat mix to the skillet add parsley and cook over medium heat for 2mins or until heated through. Serve immediately. Once this was on plates I added the freshly grated parmesan cheese to the mix and stirred it in as this added some thickness to the mixture. Hope you guys enjoy this , I can honestly say it was YUMMY
