Easy appitizer recipe These sound really good, and don't seem to be high in carbs at all. They would probably make a decent breakfast, too. Just pull a couple out of the freezer and pop them into the oven for 10 minutes.
Chili con Queso Bites
4 eggs
1/2 c. Picante Sauce or Thick & Chunky Salsa
1/4 c. all-purpose flour
2 tsp. chili powder
1 1/2 c. shredded Cheddar cheese (6 oz.s)
1 green onion, chopped (about 2 tsp.)
1. Preheat oven to 400 degrees. Grease 24 (3-inch) muffin-pan cups. Set aside.
2. In medium bowl mix eggs, picante sauce, flour and chili powder. Stir in cheese and onion.
3. Spoon about 1 T. cheese mixture into each cup. Bake 10 minutes or until golden brown. Serve warm or at room temperature with sour cream and additional picante sauce, if desired.
Makes 24 appetizers.
Tip: Baked appetizers may be frozen. To reheat, bake frozen apetizers at 350 degrees for 10 minutes or until hot.
