Default ~Easy Entertaining/Potluck Recipes~ Please share :)

I am looking for some new entertaining/potluck recipes. I am tired of the usual little weiners in bbq sauce, meatballs, etc... Below is one of my favorite recipes that is always a hit. I hope to find some new ones out to try.


Buffalo Chicken Dip

Ingredients:
3-4 boneless, skinless chicken breasts
1 package of cream cheese
10 ounces or so of ranch dressing
10 ounces or more of Frank’s Red Hot sauce
4 cups of shredded cheddar cheese
1 cup of finely chopped celery
1 bag of Fritos scoops or tortilla chips

Cook the chicken breasts and then shred the meat. In a mixing bowl, combine the cream cheese, ranch dressing and hot sauce. Once mixed, combine the chicken and then place into a large baking dish. Then add the celery and top off the dish with the shredded cheese. Cook at 350 degrees for 20 minutes or until the cheese is a golden brown.

You can alter this dish to add more hot sauce, cheese or you can eliminate some of the ranch dressing depending on your preference. It is an easy hit…

Personally, I would leave the guacamole out, but I really like these kinds of layered dishes for parties.

Chili Cheese Dip

1 sm can Hormel chili - No Beans version
1 8 oz pkg cream cheese - can use reduced fat version

Heat these 2 ingredients together in sauce pan until cheese is melted and ingredients are well blended. Serve with tortilla chips.


Pinwheels

Large flour tortillas
Alouette spread - any flavor
Sliced deli meat - ham, turkey, or roastbeef - sliced very thin
shredded lettuce
Sliced Deli cheese - provolone, monterey Jack or Swiss - sliced very thin
Plum tomatoes - sliced very thin - optional

Spread Alouette over the flour tortillas. Place sliced meat and cheese over this in layers, covering all of tortilla. Top with shredded lettuce and tomato slices. Roll up tortillas and thin slice into 1" pieces.
