Anyone have any good eggplant recipes? I don't have a clue how to cook it but I've had it before at a restaurant so I know I like it.

I like it cut up into rounds, topped with a bit of black bean sauce and then roasted for about 30-45 minutes.
Also, cubed and sprinkled with fresh herbs, salt, pepper, and olive oil before roasting is pretty good.
Hmm. There is also sliced lengthwise and roasted with olive oil, salt and pepper and after roasting, topping with chopped roasted red pepper (I use the ones in a can), capers and parsley and maybe a touch of lemon.
If you don't want to roast it and would prefer a cooktop recipe, I cut up eggplant, carrots and celery into small bite-sized pieces and sauted it with oil, salt, pepper and fresh herbs. It turns a bit runny though.
Roast an eggplant, chop some roasted red peppers and add some capers. Mix into a mushy mixture and serve on crackers or crostini.
For main dishes:
Eggplant Parmesan is good, although I have never personally made it.
Recently, I made moussaka using this recipe as the basic structure: http://www.foodnetwork.com/food/reci...ml?rsrc=search. I modified it to scale it down, eliminate the milk biscuits, and used a few eggs with a splash of heavy cream instead of the milk.
When I have eggplant, generally, my husband and I have it as a lazy meal by mixing cubed lamb meat, cubed eggplant, and chopped red onion again with the standard olive oil, fresh herbs, salt and pepper. We change it up by using different vinegars with it and/or adding something spicy to it, like chili pepper. Roast or broil and serve!

Mmm, I love eggplant. If you want to go lower-fat, drizzle a small amount of olive oil on chopped eggplant pieces, throw on some season salt, and bake in the oven at 350 until it's soft and yummy.
If you are eating high-fat that day, make some eggplant parmesan. Mmm! There are a ton of recipes online that are probably yummier than the way I make it. I dip eggplant in egg and then flour it, then fry in olive oil and sprinkle a little Italian seasoning on top. I layer it with cheese and sauce and it's incredibly decadent and yummy.
Eggplant sucks up a TON of oil when you cook it, so just beware!

I leave the peel on for all of the recipes I suggested. Well, I don't know what you do with Eggplant Parmesan as I have never made it. The skin has lots of nutrients. You want to keep that!
