Default Favortie Low Carb Recipes

I was wondering what your favorite low carb recipes are? I know my personal favorites are fauxtatoes...basically mashed cauliflower with butter and cream.

Low carb fish cakes:

1 can salmon (drained and deboned)
1 to 2 eggs
3 to 4 large tablespoons sf mayo
salt and pepper to taste

Stir mix and spoon into a heated, oiled skillet. If the mix doesn't hold well enough, add a bit more mayo. You can add a whole grain flour to the mix instead of the mayo.

I've always wanted to try mashed cauliflower! And, I like the name "fauxtatoes." What a riot!

Those fish cakes sound good too. I assuming you could probably substitute tuna instead. I have 2 cans of tuna in the cupboard...maybe I'll try that for lunch tomorrow!

Low-Carb Peanut Butter Cookies

1 cup peanut butter (smooth or chunky but watch carb/sugar content)
3/4 cup Splenda
1 large egg
1 tsp vanilla extract

Mix ingredients well. Spoon onto ungreased baking pan. Bake at 350* for 10-12 minutes. Let cookies cool thoroughly before removing from pan or they will crumble.

I have tried this recipe before. They are really yummy! I saw these on Foodtv and believe it or not it was Paula Dean who made them! LOL

I have a recipe for ya...My Hubba-Loo looooooves Tacos! And, since I can have the taco meat & eat like a taco salad I make it often for him. Although, I got to looking & there are actually 4 carbs per serving of store bought seasoning! I never realized that it was so high!!

So, I was doing some low-carb recipe searching & came across a Low-Carb/Sugar-Free Taco Seasoning recipe. Hubba-Loo & I tried it out today for lunch & it was amazing! So yummy!

Low-Carb/Sugar-Free Taco Seasoning

1 tbsp chili powder
2 tsp onion powder
1 tsp ground cumin
1 tsp garlic powder
1 tsp paprika
1 tsp ground oregano
1 tsp Splenda/Altern(you can buy it at Wal-Mart & it tastes better than Spenda)
1/2 tsp salt

Combine ingredients well. Add seasoning to 1lb of meat (I like ground turkey the best). Add 1 cup of water. Simmer on medium-low heat until all water is absorbed.

***I didn't have any paprika on hand so I omitted it from the recipe today. It tasted just fine. I'll buy some for next time & see if it makes a difference. Also, Hubby said it wasn't spicy enough for him so if you like it spicy you can add extra spicyness to it!

Recipe rating: 10 out of 10!
