Default Fiesta Soup

I thought I'd share this recipe I love to make. It is low fat, and can be made low carb quite easily - plus, it's quick, easy and yummy.

Fiesta Soup
2 cans low-fat chicken broth
1 cup salsa (mild, medium or hot - pick your pleasure)
1 cup frozen corn (can be eliminated if you don't want the carbs)
1 large can red kidney beans, drained
2-4 boneless, skinless chicken breasts, cut into small chunks

Add all ingredients in a large saucepan and bring to a boil over medium-high heat. Boil, stirring occassionally, until chicken is cooked through.

I play around with the measurements - for instance, I like it chunkier, so I don't use the full two cans of broth. The original recipe I got calls for a smaller portion of kidney beans, but I really like them, so I use a whole large can. You can just play with it and see what you think. You can also top it with some shredded cheddar cheese - mmmm...

i'm trying this today- put it all in the crock pot. it smells SOOOO good!

love the looks of all the recipes, but i think this is the first i'm actually trying. thanks for posting this!
