Hey there!
I just experimented/modified recipies until I came up with a great oven fish dish, and I thought I'd share it with you guys. It's great for people who don't like fish that much

Also, it has added proteins because of the eggs. I used cod, but it can be made with any kind of fish, I guess. Great for frozen fish.
Ingreidients:
- Fish - fresh or frozen, but thawed. (Amount depends on how many people you're cooking for, but I use at least 200 g/7 ounces per person)
- Vegetables (leeks, onions, bell peppers, carrots, broccoli, fennel etc. You can use whatever you like!!!)
- A couple handfuls of cooked, wholegrain pasta (you could drop this)
- Eggs (4 eggs for 4 people etc.)
- Whole milk/creme: about a cup per egg (could be switched with water or skimmed milk)
- Low fat, grated cheese (as much as you want or can have)
- Spices: salt, pepper, paprika, thyme; again, use whatever you like.
Here's how it's done:
Preheat oven to 200 degrees celcius/about 400 fahrenheit. You need a big oven safe dish or a baking pan. Grease it with olive oil/cooking spray/whatever you like to use.
Cook the pasta if you choose to use pasta. Put the fish in boiling water for 4-5 minutes, take it out and let it drain really well. You could skip the pre-cooking, but it's better this way. Place all the "solid" ingreidients (fish, vegetables, pasta) in the oven dish. Combine the eggs, milk, spices and half of the grated cheese in a bowl, and give it a good stir. Pour the liquid over the fish etc. in the oven dish. Then sprinkle the rest of the cheese on top. Cook the dish in the middle of the oven for about 15 min (depending on the vegetables and state of the fish when you put it in). Put an aluminium sheet on top if it gets too brown. The dish is done when the fish "falls apart" when you poke it, and the egg-stuff is stiff like an omelet.
Voila!
(You probably could put the fish in the dish in a frozen state, but I don't know how it would work with cooking time etc. Please let me know if you try this!)
