Has anyone tried this recipe?

I'm making it tonight and it's SO EASY and tastes pretty good! It's in the pot now and looks like there's enough there for a couple meals! Not bad for the $4.00 it cost to make it!!

I love homemade veggie soups, but sometimes I do add in chicken stock. The one you posted reminds me of some Italian soups I have tried and liked, but I haven't tried them with black beans that I can remember.

It sounds salty, but probably good. What are rotel tomatoes? Is that a brand or a variety?

Rotel are diced tomatoes w/ chili peppers in them. I just used regular diced because I don't handle spicey well!!

It really didn't taste that salty to me, but I used low sodium soup and no salt added corn.

I made this tonight, without the mixed veggies 'cause I'm not keen on them. Instead I grated an onion and carrot into the tomatoes, let them cook for a while, then added everything else to heat through.

Even my husband liked it.

Definitely a good, low fat soup to have around in the winter.
