I have found SO many there that I have either done and loved or can't wait to try.

Otherwise I've got a plethora of cookbooks and really try to make something new at least twice a month. My family is from Barbados so I do A LOT of island meals, I also love Italian food and have made many Italian dishes. As well as Asian.

I could go on all day lol I love cooking good foods, healthy tasty ones and trying new recipes and perfecting old ones.

I need to find some recipes as well. I am thinner but have gained 18 pounds since last March! I was ttc with clomid, got pg but mc and since then I have tried various methods to ttc. It has just done alot to me physically and emotionally (the late night snacking).

I need to get a grip~

I have a recipe i came up with using garlic.
-skinless boneless chicken breast
-garlic cloves
-a little garlic salt

I take the chicken brest and slice to make thinner but not all the way through. Then flop over the peice and garlic peices and some garlic salt. Then flap the other peice back over. add some meat tenderirzer and some garlic salt to the top and maybe a little parsley. I center the chicken in a baking pan and add some broccoli and or cauliflower all around the chicken and dash a bit of olive oil over veggies and chicken.
If u really really like garlic u can dice some up and add it over ur veggies. I bake this at about 350 to 375 dgrees until chicken is done!! It is sooo good! Hope u likey lol Take care <3

That does sound good and easy! I just bought some chicken today and wondered what I was going to do with it.

There's a good recipe for salsa chicken that's easy too. You take 3/4 a jar of salsa, mix in about a tablespoon of brown sugar (or less) and a little bit of mustard. Add chicken pieces and bake at 350 till chicken is done. I serve it with rice (yea..I need to find a different side). The actual measurements on a jar of Pace Salsa.

Oh, any favorites from there? I'm not totally veg anymore (ended up eating some fish), but still cook mostly veg.

Oh loads of favs... I eat veggies and fish too. I do have eggs every now and again but not often.

Those are just a few. I found them on the veggie site but went to their individual sites of origin, mostly because the pictures are a bit bigger.

I get veggie patties w/ a multigrain shell...but they come right from the Jamaican store and they ship them in from NYC...that might be your best bet to find them.

Hello,

Tried a fabulous new recipe last night that I think is okay for PCOS, it is fairly balanced and could be tweaked even more so... here it is:

Smoked Sausage with Penne and Veggies

8 oz penne pasta (go whole grain for better nutrition or cut back on the amount.)
1 cup chopped green pepper
½ cup finely chopped onion
2 T olive oil
½ pound smoked sausage, cut into ½ inch slices, then quartered (I used Turkey kielbasa but you could go with a chicken sausage or any lean meat to cut some more fat.)
2 cans (14.5oz) Italian stewed tomatoes
2 to 3 small zucchini, quartered lengthwise and sliced ½ inch thick (use 3 if they are quite small)
½ cup frozen corn
½ cup water
1 t salt (I suggest omitting the salt if you use sausage - it is salty enough as are the tomatoes - if you go with a plain lean meat you might want to use the full amount)
1 t dried basil
2 cloves minced garlic
½ t pepper
Shredded Parmesan cheese, optional (but really really good!)

Cook pasta according to package directions. Meanwhile, saute green pepper and onion in oil until crisp-tender. Add sausage, tomatoes, zucchini, corn, water, salt, basil, garlic and pepper. Bring to boil. Reduce heat; simmer, uncovered, for 5 minutes. Drain pasta, toss with sausage mixture. Garnish with Parm if desired. Yield: 6-8 servings

It fed me, my hubby and our two girls with enough leftovers for me and the girls today. And the girls loved it too although my eldest (4) prefers her veggies fresh no matter the recipe. A definite keeper for us. Experiment with veggies and meat you like and by all means add more garlic if it suits!

Suggestions: Original recipe calls for one pound of sausage, but I find that if you slice and quarter half a pound, you don't even miss the extra. There are more pieces so you get all the flavor without all the fat and calories. Plus it's nicer on the budget - just freeze the other half for later.

Nutritionals for 1/6 recipe: (Prepared with half a pound sausage, no added salt, whole wheat pasta and garnished with 1T shredded parmesan per serving.)
1 serving (approx 352g) is 347 calories, 13g fat (4g sat), 30mg chol, 844mg sod, 46g carb (6g fiber, 8g sugar), 15g protein. Estimated glycemic load 23.

FYI - 352 grams is a little over ¾ pound of food!

Nutritionals for 1/8 recipe: (Prepared with half a pound sausage, no added salt, whole wheat pasta and garnished with 1T shredded parmesan per serving.)
1 serving (approx 264g) is 260 calories, 10g fat (3g sat), 22mg chol, 633mg sod, 35g carb (5g fiber, 6g sugar), 11g protein. Estimated glycemic load 17.

FYI - 264 grams is still over half a pound of food!

For bakers and aspiring bakers, I highly recommend the White Whole Wheat flour that King Arthur brand puts out. It is as close to AP flour as you can get. Makes fabulous bread. They also have tons of delicious bread and baked good recipes on their website kingarthurflour.com as well as nutritional add ins for whole grain breads. I don't buy bread anymore because so many have HFCS in them or no fiber. Now I make bread once a week. I've ruined the fluff bread bag'o'air tradition for my girls. They won't eat the storebought air bread anymore.
