Gee, you are describing pretty much the diet I have chosen to follow to treat my PCOS/IR!
I've been doing Atkins Induction - the original diet and NOT that being touted by the Atkins Nutritional company which sprang up after his death. Far from being an over-the-top protein-fest, it is a low carb, adequate protein, higher fat diet and I can honestly say I have struggled at times to get the 12-15g daily of veg carbs in.
This is, of course, from the restricted list for this 2 week phase. I will be adding in more varieties of veg as I go through the phases but I can say I've never felt better, I'm not hungry between meals and ALL my food (absolutely all of it) is the freshest I can get it. You can't say better than that!
Incidently, the American Diabetic Association has recanted it's previous stance on Low carb diets and is now following the proof and advocating them (including Atkins) instead.
This post is an excellent starting point for us new to pcos gals. It gives a pile of great suggestions for how to assist our bodies to get back on track.
