Default Freezer Recipes

Okay, I want to try to make some stuff to stick in my freezer this weekend, so I have some things ready to go when this baby is born? Please share your favorite freezer recipes and any tips you might have.

For instance, do you you pack food in individual portions?

Here's a recipe I can contribute:

Taco casserole

1 lb ground beef
taco seasoning
kidney and/or black beans
colby jack cheese
tortilla
lettuce
tomato
sour cream

Brown lb ground beef with onions to taste
add kidney and/or black beans
add your fav taco seasoning

Layer meat, cheese and tortillas. Starting with meat, top with colby jack and a tortilla, continue until ingred. are gone. Freeze. Reheat in 400 degree oven for approximately 1 hour. Serve with garnish of sour cream, tomato, and lettuce

Congrats on your new baby! That taco casserole looks yummy.

I have a really good recipe for chicken tetrazzini I got out of Taste of Home. It's kind of fussy but sooooo good, and it makes two 11 x 7 pans of food. I actually have done three 8 x 8 pans instead, since it's just the three of us here. I have used just plain chicken breasts, or gotten one of those rotisserie chickens cheap and used that for this recipe. You can have one for dinner and freeze the other two!

Chicken Tetrazzini

INGREDIENTS

* 1 package (12 ounces) spaghetti
* 1/3 cup butter, cubed
* 1/3 cup all-purpose flour
* 3/4 teaspoon salt
* 1/4 teaspoon white pepper
* 1 can (14-1/2 ounces) chicken broth
* 1-1/2 cups half-and-half cream
* 1 cup heavy whipping cream
* 4 cups cubed cooked chicken
* 3 cans (4 ounces each) mushroom stems and pieces, drained
* 1 jar (4 ounces) sliced pimientos, drained
* 1/2 cup grated Parmesan cheese

SERVINGS 6-8
CATEGORY Main Dish
METHOD Freezer
PREP 30 min.
COOK 20 min.
TOTAL 50 min.


DIRECTIONS

Cook spaghetti according to package directions. Meanwhile, in a Dutch oven, melt butter. Stir in flour, salt and pepper until smooth. Gradually add the broth, half-and-half and whipping cream. Bring to a boil; cook and stir for 2 minutes or until thickened.

Remove from the heat. Stir in the chicken, mushrooms and pimientos. Drain spaghetti; add to the chicken mixture and toss to coat.

Transfer to two greased 11-in. x 7-in. x 2-in. baking dishes. Sprinkle with Parmesan cheese. Cover and freeze one casserole for up to 2 months. Bake the second casserole, uncovered, at 350° for 20-25 minutes or until heated through. Yield: 2 casseroles (3-4 servings each).

To use frozen casserole: Thaw in the refrigerator overnight. Cover and bake at 350° for 30 minutes. Uncover; bake 15-20 minutes longer or until heated through. Stir before serving.

Black Bean Burgers

2 cups cooked black beans, drained
1 tbsp. minced fresh onion
1 tsp minced fresh garlic
3 tbsp. finely chopped green bell pepper
3 tbsp. finely chopped red bell pepper
1 tsp chopped fresh cilantro
1/4 tsp minced canned jalapenos
dash of cayenne
salt and pepper to taste
breadcrumbs

Mash 1/2 cup of the beans. Put in a bowl with the rest of the beans. Mix well.
Add all the rest of the ingredients except breadcrumbs. Mix well.
Add sufficient breadcrumbs to make a mixture that can be formed into patties
that will hold together. Form into patties. Fry in a little oil until browned.
These freeze well.

What's the best way to freeze these casseroles to keep them from getting freezer burn or something to that effect? I've had bad experiences with freezing things. HELP!

Heres one that I like to cook

2 boxes of Spanish rice
2 cans of rotel I use mild
2 cans of cream of mushroom
1 lb of Crawfish or Shrimp
and about 1 cup of water ,

I just put it all in one big pot and cook it till the rice is soft. I know it doesn't sound good but more people ask me about this dish then anything else I cook. I guess you could put chicken in it if you wanted to. I also add extra bell peppers.

Sharleenia, I'm not entirely sure but I double-wrap. If I can fit the container into a freezer bag I do that, or just wrap the whole thing in cling wrap to be safe.

I just read a tip to line the pan with aluminum foil or cling wrap...make the dish and then freezer after the item is frozen you can remove the casserole dish. This both allows the entire item to be thoroughly wrapped reducing freezer burn and save space in the freezer.
