French onion soup!!! 2-4 cups of onions
4 cans beef broth(I use the tetra pack of beef broth plus one can)
1/4 cup butter
2 tbs olive oil
2-4 pieces of LC bread( I use light rye), and mozza cheese to top.
1. cut onions into strips(or chunks if you prefer)
2. melt butter in pot on med. heat, and add olive oil, then add onions, and stir until translucent, not brown.
3.Add beef stock, and simmer for 30 minutes.
4. ladel soup into oven safe bowls, and place either whole slice of bread or pull apart into bite size pieces ontop of soup.
5. then sprinkle chees ontop of the bread. place bowls onto cooking sheet, and broil until cheese bubbles and browns!
If you want the cheese you must use a little bread, or the cheese just sinks to the bottom, and you don't get the brown crusty cheese ontop.
This soup is VERY good!
