Here is a loaf my diet club leader made this week for us , its very yummy
Total calories =1'530 per cake 155 per slice
what you need
10oz mixed dried fruite
4oz wholemeal self raising flour
1/3 mixed spice
4oz all bran cereal or fibre
1/2 skimmed milk
mix cereal and fruite thoroughly in a bowl and stir in milk . cover with a cloth and leave overnight to soak. preheat oven to gas mark 4 . add flour and spice and mix well .spoon mixture into a well greased 2lb tin bake for approx 1 hour. losen with a palette knife turn onto a wire tray to cool
