Chocolate Cream Pie----a la Better Homes and Gardens
1 pastry shell
4 eggs
1 c of sugar
1/2 c of cornstarch
3 oz of chopped, unsweetened chocolate
2 1/2 c of half and half, light cream, or milk
1 tbs of butter or margarine
1 1/2 tsp vanilla
Preheat oven: 325
Bake 30min.
makes 8 servings
cool:1 hour
chill 3 hours
1) prepare baked pastry shell
2) seperate egg yolks from egg whites (egg whites are for the meringue)
3) For the filling:
in a medium saucepan, combine sugar and cornstarch. gradually stir in your half and half. cook, and stir over medium-high heat until thickened and bubbly; reduce heat. Cook and stor for 2 minutes more. Remove from heat. Slightly beat beat egg yolks with a rotary beater or fork. gradually stir in about 1 c of the hot filling into the yolks. Add egg yolk mixture to filling in saucepan. bring to a gentle boil, reduce heat. cook and stor for 2 more minutes. remove from heat. stir in butter and vanilla. keep filling warm. perpare meringue.
pour warm filling into the pastry shell. Bake 30min.
**the recipe i have calls for meringue----not sure if you want that or not...**
you can also do whipped cream, instead of meringue

So my neighbor gave us a bunch of fresh plums off of her plum tree. They are the small kind. Sweet but kinda tart, esp near the skin and pit. Because of that they are hard to eat fresh. I thought they might make a good pie. Anyone have or know of any good recipes for a plum pie? I would use a ready made crust for sure...I am a virgin pie baker at best!
And Tracey promised me a chicken recipe. I get so bored with chicken. I need something not too complicated and yummy!

Yeah, I need something easy and chickeny. I'm supposed to be eating lean protein each day...but I've been slacking in that dept. Help! I've got frozen skinless chicken breasts in the freezer!

I have a good chicken casserole recipe that my friends mom made eons ago....
it calls for shredded chicken though....but i bet if you cube the chicken breasts up it'd still be pretty good----it's a little spicy though---not a lot...just a little.
I'll put it up tonight for you.
umm..plum pie...i'll have to think about that one...not sure if i have a reliable one of them (I know i've never made one....)

Alisha: I bet you could make a plum crisp. I make cherry crisp or apple crisp often and I would bet that it would be just as good. I'm not a pastry person either which is why I opt for crisps.
