Alisha - I've done the same thing many times. One particular time, I realized that I was being so nasty to him and he hadn't even done anything wrong. So I apologized. Then he looked at me and said, "What happened to the bitc&*y Bennie? Bring her back!". My nickname is Bennie. Anyway, maybe he likes me being mean to him or something...lol. Then there's other times when I'm not even eveing mean and he yells at me that I'm "giving him attitude". Whatever. He's way moodier than I ever am....lol.

Buffalo Chicken Dip

My family, friends, and co-workers love this and request it often.

Ingredients:
3-4 boneless, skinless chicken breasts
1 package of cream cheese
10 ounces or so of ranch dressing
10 ounces or more of Frank’s Red Hot sauce
4 cups of shredded cheddar cheese
1 cup of finely chopped celery
1 bag of Fritos scoops or tortilla chips

Cook the chicken breasts and then shred the meat. In a mixing bowl, combine the cream cheese, ranch dressing and hot sauce. Once mixed, combine the chicken and then place into a large baking dish. Then add the celery and top off the dish with the shredded cheese. Cook at 350 degrees for 20 minutes or until the cheese is a golden brown.

You can alter this dish to add more hot sauce, cheese or you can eliminate some of the ranch dressing depending on your preference. It is an easy hit…

Yummie! I will have to try this. DH doesn't like the recipe I have with Blue cheese crumbles.

Maybe I am a dip...but is this like to put on a bun and eat like a sandwich or is it a chip dip? It sounds so good

The name of the cookbook I was going to get for you ladies is:

Down-Home cooking for One or Two. It's a taste of home book. My Grandmother calls their 1800 number and buys the previous years book directly from them for $10 instead of paying $30 in the store. I wrote down the number somewhere... I'm going to look now.

Default Fish in Foil

This recipe proves that cooking a satisfying supper for one can be fuss-free. Cooked this way, fish stays moist and flavorful. Plus there are no dishes to wash.

(this is a diabetic low fat recipe)

1 halibut steak (6 oz)
4 medium mushrooms
2 cherry tomatoe, halved
2 lemon slices
1/2 medium green pepper, sliced
1/4 cup diet Moutain Dew
Crushed pepper to taste

Place fish in the centre of a 20 in x 14 in. piece of foil. Place mushrooms, tomatoes, lemon and green pepper around fish. Slightly fold up the edges of the foil; poor soda over fish. Fold the foil to seal tightly.

Bake at 375 for 20-25 minutes or until fish flakes easily with a fork. Open foil carefully to allow steam to escape. Sprinkle with pepper. Yield: 1 serving (easy to double)

Nutrition facts: 1 serving is 205 calroies, 4 g fat (0 saturated), 49 mg cholesterol, 95 mg sodium, 8 g carbs, 0 fibre, 34 g protein.

I've used snapper or basa as a replacement for halibut as sometimes it's very pricey.
