Mmmmm... I love me some good stew!

I'm up for any recipes! We've been eating a lot of chicken recently, too.

I'm sans microwave (and crock pot) until we go back to Flint in August, so if y'all have any ideas about reheating foods I'd love to hear them!

OH LJ, no microwave is tough. Ours recently broke and we've purchased a new one but because it's a built in it's still in the box and has been for a month. We boirrowed one from a friend though but we did go a couple of weeks with out one. The hardest thing to reheat is pasta....hehe...

Until you get a microwave it's all about the steam. You'll have to heat everything on the stove. Get the pan nice and warm, throw the food in, put in a tablespoon of water or so (pan has to be hot when you do this) it'll steam up and keep your food moist and throw the lid on.

My StepMother still heats up food this way. My Dad claims if she heats it in the microwave it tastes different.

Do you guys eat microwave popcorn? I can tell you how to make delish popcorn on the stove if you need it.

One of my favorite Chicken recipes. Sorry too spicy for the baby Kensi though

8- 6 inch tortillas
4 cloves of garlic minced
1/4 tsp pepper
3 TBS flour
2 cans ofn jalapeno chili peppers
2 cups of chopped chicken (cooked)
Black olives
green onions
1/2 cup chopped onion
1 tsp coriander
2 TBSP butter
1- 8oz sour cream
2 cups chicken broth
1 cup shredded cheese
1 tomato

Sauce: Cook onion, garlic, coriander, pepper, butter until onion is tender.

Stir: flour into sourcream; Add to onion mixture. Stir in broth and chili peppers. Cook until thickened and bubbly. Remove from heat and add cheese.

Mix half a cup of sauce with chicken. Fill the shells with the chicken/sauce mixture.

Sprinkle remaining cheese and sauce on top.

Bake at 350 for 35 mins.

Sprinkle: olives, tomatos, and green onions on top.

My family, friends, and co-workers love this and request it often.

Ingredients:
3-4 boneless, skinless chicken breasts
1 package of cream cheese
10 ounces or so of ranch dressing
10 ounces or more of Frank’s Red Hot sauce
4 cups of shredded cheddar cheese
1 cup of finely chopped celery
1 bag of Fritos scoops or tortilla chips

Cook the chicken breasts and then shred the meat. In a mixing bowl, combine the cream cheese, ranch dressing and hot sauce. Once mixed, combine the chicken and then place into a large baking dish. Then add the celery and top off the dish with the shredded cheese. Cook at 350 degrees for 20 minutes or until the cheese is a golden brown.

You can alter this dish to add more hot sauce, cheese or you can eliminate some of the ranch dressing depending on your preference. It is an easy hit…
I saved this when I came across it the first time and just had a reason to make it. I had a potluck at work yesterday and it was a huge hit! Thanks Heidi!
