My Mood: Points: 21,353.42 Bank: 0.07 Total Points: 21,353.49 | Just thought I would share a yummie recipe for pudding I made last night. I needed a dessert and didn't have much in the house.
I took a martini glass and filled the bottom layer with instant chocolate pudding.
For the next layer I used a couple of spoonfuls of carmel apple dip (warmed up slighty to make it spreadable).
Then I took a green apple and put it through my shredder and topped it with a little whipped cream. It was a hit with the big kids and little kids

I just didn't know you could do that! | I think the shredder would have worked on an apple that was crisper. It turned out that mostly the juice ran into it and chucks of apples. But it really did prevent some of the browning of the apple when I did it that way.

Mojo Chicken Quesadillas
Mojo Marinade (publix brand works really well!- if you dont have publix, I would point you to the spanish section of your grocery store)
1 green pepper
1 Lg Tomato
1 Lg Onion
1 Jalapeno
Boneless Skinless chicken breast
Shredded cheese
Tortillas
Tip for Jalapenos:
when you cut them up take out the seeds and "innards" it cuts down the spicy aspect.
If you stick the chicken breasts in the bottom of your crockpot until it is covered, top with enough mojo to cover the chicken (and fill in the little cracks between) then shop the veggies and toss in. Cover... cook on low while you are at work
When you get home you can turn off the crockpot, pull out the chicken and shred. Strain veggies from leftover juices, and mix into shredded chicken. Make quesadillas
I use the low carb south beach diet wheat tortillas... I am on the GI diet. It works great! Everyone in my house loves them, and despite what it sounds like, it is really easy/

And before I have to take my mom to the doc, I thought I'd come on and give you that awesome chicken recipe I was talking about with some of you before. We made this during our dinner night to cook at the family reunion and everyone could not stop talking about it. And it's so easy! - 4 small boneless skinless chicken breast halves (1 lb.)
- 1 medium tomato, finely chopped
- 1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
- 1/4 cup chopped fresh basil or 1 tsp. dried basil leaves
PLACE large sheet of heavy-duty foil over half of grill grate; preheat grill to medium heat. Pour 2 Tbsp. of the dressing over chicken in resealable plastic bag; seal bag. Turn bag over several times to evenly coat chicken with the dressing. Refrigerate 10 min. to marinate. Remove chicken from marinade; discard bag and marinade. GRILL chicken on uncovered side of grill 6 min. Meanwhile, combine tomatoes, cheese, basil and remaining 2 Tbsp. dressing. TURN chicken over; place, cooked-side up, on foil on grill. Top evenly with tomato mixture. Close lid. Grill an additional 8 min. or until chicken is cooked through (165ºF).

You can do that while you put the other ingredients together.  And just eat it with a salad or veggies. They also suggest putting it with egg noodles and veggies.

Chili Improves Your Blood Sugar Women with PCOS commonly have an exaggerated, excessive insulin response to starches and sugars consumed during a meal. We uncovered some research from the University of Tasmania in Australia showing that consumption of chili powder with a meal reduced the amount of insulin required to handle the increase of blood sugar with a meal. One of the reasons is that cans may contain a
chemical called "Bisphenol A" or BPA. This is a
chemical that has an estrogenic effect in your
body. You cannot see it or smell it. It is not listed

BPA is everywhere in the environment. All people
have detectable levels of BPA.
Studies in lab animals suggest the average levels
found in body tissues are high enough to cause a
wide range of adverse effects. A few examples:
