i know what you mean!! It is sooo confusing at the start (or so i found, anyway). I did it a few years back - basically what i did was eat lots of fruit/veg. Not potato and only low gi bread.

I didn't do the full GI as such but i choose elements out of it that I felt made sense. I replaced my beloved mash potato with things like lentils and quinoea. Used only wholewheat pasta. Wholewheat multi grain bread and brown basmati rice.
I found after a couple of weeks that i was naturally eating less as i felt fuller for longer and worked well with met.
What made it work for me was going through a book choosing what i would like and making out a shopping list and sticking to it.
I then fell off the wagon and put the weight back on plus some. But starting it all again today

I can't quite get my head around it either. I think Cazza did it at one point though. When I have the baby I'm going to go on it so I've 15 weeks to understand it!
The principle of it sits well with me and as someone said it works well with met.
When I lost all the weight before my first pregnancy, I applied the fundamental principles of GI to my eating habits - whole grains, limiting simple carbs etc and it really worked well for me.
Good luck with it, hope you find some helpful info somewhere.
I think of it as a cross between rice and cous cous. I just treat it like rice but use different stock in the water. For example cook in with a fish stock cube (or fresh fish stock if you are worried about salt) and add peas and prawns. I take it in a lunch box to work and eat it cold
It's also great with chicken stock and added fresh corriander to eat along with curry

i did the basics of it for a short time, which has been good prep for keeping my blood sugar sorted. I did a mixture, used the basics behind GI and integrated it with weight watchers which i had done before.
Didn't do it for too long because i was stressed ttc and didn't have enough motivation, but when the baby comes i will go back to the GI eight watchers combo

jess - well, its the one my endo suggested to me I lost some weight with it. Trying to do it again now, but it's harder - as i eat rice crackers (wheat intollerant) so can have the healthy bread.

I'm having excellent results with low GI. I've lost 25 lbs since mid October by sticking to its principles. I also have got my blood glucose completely stabilized (I'm a type 2 diabetic).
As a good starting book I'd reccommend 'Easy GI Diet' by Helen Foster because it's easy to read and understand and has a couple of 2 weeks plans in there (including one for vegetarians which is great) and so will kind of teach you how much you can each and how to balance your meals. It also has a good index at the back that tells you if a food is low, medium or high.
A lot of the supermarkets are beginning to mark their low and medium foods in their own brand sections. I've seen more and more products with a low or medium GI stamp on it...although they don't mark their high GI stuff. I eat low and medium foods pretty much all the time, except before doing exercise when I might eat a granola-bar type thing (mnade from puffed white rice).
As an above poster mentioned...it's mostly a case of substitutions. Instead of eating mashed potatoes I'll eat a small portion of new potatoes which are low GI. Instead of white bread I eat Burgen Soya and Linseed bread. If I want a sweet treat I eat some Green and Blacks plain or milk chocolate. If I want to eat a high GI food, I eat a small portion and combine it with at least 2 low GI foods.
