My Mood: Points: 4,965.48 Bank: 0.00 Total Points: 4,965.48 | LJ - With your fruit, you can have a slice of whole grain stone ground bread (or toast) with some "I can't believe it's not butter" spray or "Promise" spread. I personally love both.
For everyone else who likes eggs: Michael and I have been eating egg cups. Just chop up the veggies you normally like to have in an omelet. I try to do just over two servings of veggies for the two of us. then I will coat 4 muffin pan holes with olive oil cooking spray and fill them with equal parts of the veggie mix. I add 1/8 cup of egg white substitute to each cup, a little salt and pepper and 1/4 slice of lowfat cheese on top. Bake at 375 for about 25 minutes. We each get two egg cups. Delish!
I actually made a dozen of them last night and we each had two this morning, I have 2 packs of 4 frozen for future breakfasts too.

Foldgers Cinnamon Swirl is delightful!!! It's delicious!! Plus it's got cinnamon in it...that's good for me...RIGHT?! ;-)

Everyone - You can call me Tiff. this is my new favorite thread! I keep checking to see if anyone has posted anything new. I would like if people posted new delicious low GI combos as they are discovered. Also, easy work-out ideas or DVDs that are fun.

I'm so glad other people are still drinking caffeine. I was really worried about still drinking it, but I have limited myself to 1-2 diet pops a day. I work late nights with troubled youth and so I CAN NOT fall asleep. If I gave up caffeine competely I know I would have some major problems staying awake. I know because I've tried before.

I have smoothies with protein mix, flaxseed, skim milk and berries
I believe this is low GI. Each thing alone is low GI so I am thinking together they would still be.

The hard parts have been when we went out to eat. Now, if it were just hubby and I, we would not have gone out to eat at all... but it was his sister's birthday and my cousins' graduations. I did really well at the graduation dinner except I ate hamburger meat that I am positive was NOT lean. Going out for his sister's birthday, I totally gave into temptation and ate chicken fried steak and mashed potatoes... which were not even good! BLECH!
Now, for the SUPER exciting part. I am down SEVEN lbs. SEVEN... in one week. Now, most of that is water weight and I am expecting the weight loss to really slow down, but it still feels totally rad.
How is everyone else doing with the GI diet? I know for myself... the two things I really need to watch are making good selections when eating out and portion control.

Okay, I'm gonna start today/tomorrow...so I need to go grocery shopping today. What do you all do? Just basically load up on low g.i. fruits and veggies to see how you can make them into meals? I'm never good at this part I tell ya! I'll basically need to preplan each of our meals (DH and I - if I fix it he'll eat it basically), and have them pretty much ready to go...guess I need to crack out my G.I. Express book! But definitely let me know if you have any suggestions on grocery shopping!
