Shortly after I was diagnosed with PCOS, I recall reading something about glucomannan for the control of blood sugar, and I used to take glucommanan capsules.

Konjac is the word that I have been using - I bought some noodles a while back but I did not have much success with making them into something that I enjoy - may I ask what you made with your?
Also the image you posted says tofu shirataki - do yours contain tofu and konjac - mine just contained konjac maybe I would have been happier with something that had other ingredients.
I think the magic about konjac nutritially is that it is almost pure soluible fiber.
Yes the ones I use have a blend of tofu. From what I understand it improves the texture a bit, and adds one gram of protein. It's still only 20 calories per serving.
I mentioned the two things I've tried them with over on Fitcysters, but here they are again:
- First try was in a veggie/chicken soup. They were just like regular noodles. (Plus I read that to get the best results, rinse them well...dry them well...and cook them well. I made a point to do all 3)
- That recipe was so good that I decided to try them in something where they couldn't 'hide', so I made a chicken tandoori pesto noodle dish. It was BEYOND delish (noodles, pesto sauce, diced tandoori chicken, and a dash of soy sauce. I think I added some onions and diced tomato, too.)
The pesto pasta was so good, that I've made it several times since. But I notice a BIG difference when I don't rinse and dry the noodles well before cooking them.

Where do you find these noodles? My Trader Joe's used to carry them but for some reason they haven't had them for a while. I can't find them in any of my normal grocery stores.

do we still have to worry about how much? not that im gonna go on a noodle binge but just curious to know if they are just looked at as a better noodle or if its actually good for you?

Where do you find these noodles? My Trader Joe's used to carry them but for some reason they haven't had them for a while. I can't find them in any of my normal grocery stores.
My local Whole Foods carries the Tofu Shirataki ones. I can't recall which part of the store they were in (It was some place I didn't expect them to be...)
But I also found some without the tofu in my local Asian grocery store. They were $1.99 a pack. My plan is to try them this weekend.
If you can't find them locally, I know that there are places online where you can order them, and I think they're worth trying to find.

BTW, I got two different types of the noodles the other day. I got the regular white ones, but also some brown ones with seaweed. The store owner said they taste slightly different than the white ones.

Ok, so I made the ones that don't have tofu in them (that I got at my local Asian grocery store), and while I ate them (and they didn't taste 'badly', the texture was a bit too 'slick' for me.)
This weekend, I got some more of the tofu ones, and tried the Fettucine ones. LOVE THEM. (They're in the BLUE packet below).
I made a chicken curry noodle dish that was TO DIE for, and only had a total of 8 carbs.
Here is the nutritional information:

I tried these tonight, I made the recipe from Hungry Girl for the Mean Lo Mein, it was wonderful! I also rinsed and dried them before cooking them, so I am not sure what difference that made, but I have to say it was nice not to have the carb slump after eating them.
Kat-I totally missed this thread! I love pasta and cannot wait to give these a try. I have had to cut down on a lot of stuff lately and this may be what I am looking for.
