Right now I'm eating bison from my slow cooker and roasted carrots, red peppers and butternut squash. After, I'm going to have a pear. That's my breakfast. Lunch will be the same. For a snack, I've got a home made
mushroom-walnut soup and a bag of mixed nuts (unsalted). Supper will be roasted chicken breasts and asparagus. I'll make enough at supper to cover my breakfast and lunch for tomorrow. That way, I only have to cook once a day.
Basically, any veggie can be tossed in herbs, seasoning and oil (I like walnut oil) and roasted in the over and will taste fabulous.
Meats can be easily prepared in a slow cooker with a bit of garlic and onion. Add red wine for red meat and white wine and fruit for pork (try plums or pineapple) or chicken (lemons, oranges and cranberries, pears) will make it absolutely amazingly delish.
For the rest of the day, snack on fresh veggies, some fruit and nuts.
Nuts are, in a word, awesome. You can grind nuts up in a food processor or grinder and use the nut flour as a coating for meat. I like to take pork tenderloin, dip it in egg, roll it in walnut flour with herbs and then roast it in the oven. Tastes fantastic!
