Default Gluten Free anyone?

My 2 1/2 year old DS has Celiac Disease and our whole house eats gluten free. I was just wondering if there were any other PCOS'ers who were eating the same?

I really struggle with finding the right flour mixture for higher protein/fiber. I've heard Rice Flour has a really high Glycemic index and want to get a good mix that's lower carb.

I don't have a lot of information, but the cookbook author Dreena Burton has written some interesting material on raising children in a vegan household. Obviously Celiac is different, but she gives A LOT of recipes gluten-free options if they are not already gluten-free to begin with. Hope this helps a bit. I know that quinoa and chickpea flour can help some, although maybe not with the fiber??? Kamut and millet as well. Most healthfood stores carry those grains in bulk.

I struggle with dairy-free so I can understand the difficulty. There is little bits of milk protein in so many things!!! Even soy products.

Thank you for the recommendation. I will have to check that out. I have used quinoa in the past, although it seems to exacerbate the met symptoms. I've also been using Teff. I will have to check out the chickpea though.

I have celiac disease. Once you get the hang of it, it's really not a big problem. I've found that buckwheat (even though it has the word "wheat" in it, it is gluten-free), soy, fava, and garbanzo bean flours make great combinations for breads and other baked goods. They're all high in protein and fiber, and you honestly can't taste the beans like you might think. I have friend that has this and she said Whole Foods has a lot of Gluten Free meals and cookbooks available.
