Default Tofu Stroganoff

Here's a good one-and it's Zone friendly

Ingredients:
1 lb. firm tofu* [5P,1C]
1 c. plain low-fat yogurt [2P, 2C]
8 oz. sliced mushrooms [1C]
8 oz. green beans, fresh or frozen [1C]
2 large chopped onions [2C]
1/4 c. soy sauce
2 tsp olive oil [6F]
2 t. dry basil, optional
*Check your labels, different brands of tofu can differ in nutritional information.

Directions:
Cut tofu into 1/2" wide strips and marinate in soy sauce for 40 min. (If cutting sodium, less soy sauce can be used). Saute onion in olive oil with green beans for 5 minutes. Add drained tofu, basil, and mushrooms. Cook 5 minutes. Mix yogurt with soy sauce and stir in just until heated. (Boiling yogurt will cause it to separate; it tastes just as good, however, if it does separate.)
