Question Grain Recipes

I would love any quick and easy recipes that cysters use for grains (quinoa, brown rice, couscous, etc.) I prefer white rice to brown but I know if I could find the right way to really make it flavorful I could be a convert! (converted rice - heh!)

Please be as specific as possible with times, types, ingredients as I am a COMPLETE nerd in the kitchen! TIA!

Lately I've been making brown rice in the oven. Just put 1.5 cups of brown rice, 3 cups water and a pat of butter (of course!) and bake in a covered dish for about 1 hour at 375, I believe. I got the recipe from the Good Eats website on foodnetwork.com. (LOVE that show!!!) Its so easy and the brown rice comes out soft and ready to go. My dh loves it.

I cook onions, thinly sliced carrot and any other diced veg I fancy in a small amount of olive oil in a medium sized saucepan until the onions are soft (I also put in all sorts of spices and garlic, or sometimes none at all!). Then I add the brown rice and stir it around then I add enough water to cover it all and some salt free stock and cook ( bring to boil then simmer ) it on a medium heat until the rice is soft, checking the water doesn't boil dry. If you taste the water the rice is cooking in before you heat it up you will get an idea of the overall finished flavour and so you can season more. If I have used indian spices I add fresh coriander at the end. If I haven't is very nice with fresh parmesan grated on top.

Brown rice is very different to white. A completely different texture. Once you are used to it white rice tastes like gloopy mash potato! Honest!

I cook quinoa in broth--I just follow the directions on the package, but I use broth instead of water. It makes a HUGE difference--I like it with broth, but with just water it's the most boring food this side of undoctored oatmeal!
