Default Green tea drinkers. . .here's some unsolicited advice ;)

Thought I'd post this because here and IRL I've heard a lot of people complaining about the taste. . .a while back a friend of mine told me that the best temperature to brew the tea at is 80°C (so--hot, but not boiling). . .and not to steep it more than 3 minutes. I always put a shot of cold water in my cup before pouring the boiling water on top. This cuts down on some of the nasty taste.

But let's face it. . .it will never taste like Coke

There is a tea shop in the Dallas area that had a class on proper brewing of exotic teas. I LOVE black tea, and thought I knew how to brew--no I didn't! Green & white teas are so much more delicate than black, you have to treat them very differently or you end up with a bitter brew. Now that I know that you don't pour boiling water over them, I do like the taste better. And flavored green tea can taste pretty good!

The shot of cold water is a good idea for cooling it down! I used to 30 second rule of thumb--let the kettle cool off the burner for 30 seconds before pouring over the green tea leaves--but not always reliable.
