Default Healthy Ground Beef Recipes?

Anyone have any Healthy ground Beef Recipes? Until I go to the Dietician later this month I'm not so sure one what's ok and what's not and I'm getting tired of Baked Chicken real fast.

I have a very old ground meat cookbook, and I substitute some healthier things as needed. Here are some examples:

Meatloaf- use low fat and use whole wheat crackers or whole wheat toast, crumbled instead of white.

French Fry Pie- Make mealoaf as above, but pat into an oven safe pie dish. Top with sweet potato french fries and low sugar ketchup.

Stuffed Cabbage Rolls

Take 12 cabbage leaves and immerse in boiling water for 3 minutes or until limp; drain. Combine 1 beaten egg, 1/4 cup water, 1 cup cooked long-grain rice, 1/4 cup chopped onion, 1 and 1/4 tsp salt, 1/4 tsp pepper, 14 tsp dried thyme leaves, crushed. Add 1 and 1/4 pounds ground beef, lean and mix thoroughly. Place about 1/4 cup meat mixing in center of each leaf; fold in sides and roll ends over meat. Fasten with wooden picks and place in large skillet. Combine 8 oz of tomato sauce, 1 tbs brown sugar and 1 tbs lemon juice and pour over rolls. Simmer, covered 1 hour, basting occasionally. remove cover for last 5 minutes or till sauce is desired consistancy. Serves 6.

Stuffed tomato cups

Take 4 large tomatoes, cut off tops and scoop out pulp. Chop tops and pulp and drain. Cut sawtooth edges around shells; drain. Sprinkle inside with salt and basil. In skillet brown 1/2 pound lean ground beef with 1/4 cup chopped onion; drain. Stir in tomato pulp, 2/3 cup herb seasoned stuffing croutons, 1/2 tsp salt, 1/4 tsp Worcestershire sauce; stuff shells. Sprainkle tomatoes with 4 tsp grated Parm. cheese. Place in shallow baking dish; fill dish with 1/2 inch water. Bake at 375 for 25 to 30 minutes. Trim with parsley. Serves 4.

Stuffed Pepper Cups

Cut tops off 6 medium green peppers; remove seeds and membrane. Scallop edges. Precook peppers in boiling salted water 5 minutes; drain. Sprinkle inside of cups generously with salt. Brown 1 pound lean ground beef and 1/3 cup chopped onion. Add 1/2 tsp salt and dash pepper. Stir in 16 oz chopped tomatoes, 1/2 cup uncooked long-grain rice, 1/2 cup water and 1 tsp Worcestershire sauce. Cover; simmer 15 minutes. Stir in 4 oz shredded sharp cheese. Stuff peppers; place in 10x6x2 baking dish. Bake at 250 for 20 to 25 minutes. Serves 6.

Stack-a-dinner

In skillet brown 1 pound lean ground beef, 1/2 cup chopped onion; drain off fat. Add 8oz tomoato sauce with mushrooms, 1/4 cup ketchup, 1/2 tsp dried oregano leaves, crushed, 3 drops hot pepper sauce, 1/4 cup water, 1/4 tsp salt and dash of pepper; bring to boil, stirring often. Separatly, cook 2 cups rice and 10 oz peas. Layer individual dishes with rice, peas, meat, then top with shredded American cheese. Trim with Pimiento stuffed green olives. Serves 6.

Stroganoff Sandwich

Take 1 loaf whole wheat french bread, cut lenghtwise, wrap in foil and heat at 375 for 10 to 15 minutes. In skillet cook 1 pound lean ground beef and 1/4 cup chopped green onion till brown; drain. Stir in 1 cup low fat sour cream, 1 tablespoon milk, 1 tsp Worcestershire sauce, 1/8 tsp garlic powder and 3/4 tsp salt; heat, but don't boil. Brush cut surfaces of bread with olive oil and spread 1/2 of hot meat mix on each loaf half and alternativly top with tomato slices and green pepper rings. Sprinkle with sharp American cheese; bake at 375 for 5 minutes. Serves 8.

THis isn't a recipe, but I love ground beef. To cut down on the fat, I try to mix 1/2 ground beef and 1/2 ground turkey, when it's cooked together, it looks and tastes the same without all of the fat.

Pizza Meat Loaf

1lb. extra lean ground beef or ground turkey
1/4 cup. pizza sauce
1 oz. grated, part skim Mozzarella cheese
1/2 cup thinly sliced vegetables (green peppers, onions, mushrooms) or any other veggies you like.

Preheat oven 425. Spray a 9 inch pie plate with nonstick cooking spray. Pat the meat into the pie plate. Bake for 12 to 14 minutes. Drain any fat. Top with pizza sauce, cheese, and vegetables. Turn to oven for 5 minutes. Serves 4.

I have more, I just gotta get my recipe box and folder out. I will post some more later.

Here is another ground beef recipe I found in my recipe folder. It is a crock-pot recipe.

Cabbage Stew

1lb. ground beef
1 can tomatoes
1 large onion, chopped
1 can whole kernel corn
1 tsp. garlic salt
1 small head of cabbage
3 ribs celery, chopped
1 can stewed tomatoes
1 can Ranch style beans
1 Tbsp. chili powder

Mix all ingredients together and put into crock-pot. Cut cabbage and place on top. Cook 5 or 6 hours on high. Do not add water or drain any liquid off of the canned vegetables. Makes a crock-pot full. Serve Hot.
* You could also use ground turkey meat in this recipe or lean ground beef.

I found this in the Kraft Food & Family magazine they send in the mail. It is full of veggies, and my husband LOVED it!

Layered Enchilada Bake
1 lb lean ground beef
1 large onion, chopped
2 cups chunky salsa
1 can (15oz) black beans, drained, rinsed
¼ cup Italian dressing
2 Tbsp taco seasoning mix
4 low carb (or high fiber) tortillas (10 inch)
1 cup light sour cream
1 pkg (8oz) Mexican style shredded four cheese blend

Preheat oven to 400˚F. Brown meat with onions in large skillet on medium-high heat; drain. Mix salsa, beans, dressing, and seasoning mix. Combine with meat and onions. Mix well.
Arrange 2 of the tortillas in single layer on bottom of 13x9 inch baking dish; cover with layers of half each of the meat mixture, sour cream, and cheese. Repeat all layers. Cover with foil.
Bake, covered, 30 minutes. Remove foil. Bake an additional 10 minutes or until casserole is heated through and cheese is melted. Let stand 5 minutes before cutting to serve. May top with shredded lettuce and chopped tomatoes.

ITA. I call it Mexican lasagna, but its always a good use for ground beef. Tacos, burritos, meat sauce over whole wheat spaghetti, etc...

How about Taco Soup? I do Weight Watchers and it is only 2 1/4 points for 1 cup.

Taco Soup

1 lb browned ground beef, drained of fat
1 can corn....I actually just use frozen corn
1 28 oz can diced tomatoes
1 can kidney beans
2-3 tbsp taco seasoning

put all ingredients into a saucepan and simmer.

I usually make some muffins to go with it. It is a wonderful meal!
