Default Healthy Soup Recipes

Hi,

We finally got a microwave in our office at work (YEY!) and i was wondering if anyone has any nice healthy soup recipes they could share with me - the simpler the better as im not much of a chef!

i currently make the same one all the time at home and then bring it in a couple of days a week to warm up - i think its based on the weightwatchers no-point soup as my friend used to make it at uni and i just kinda copied her from what i could remember.

so anyway, its nice and simple and this is what i use:

half a cabbage
1 red pepper
1 onion
1 carrot
1 potatoe
1 tin of plum or chopped tomoatoes
water!

then i just let it simmer in a pan for about 30 mins and then cool it down and blend it all. it really is nice and filling, but getting a little boring!!

any ideas/tips/recipes would be much appreciated as im really trying to keep the weight off and possibly lose another few lbs before the wedding.

I love to make soup. Any type. If you want some recipees there are some on uktvfood.co.uk I love making a root veg soup - which is really easy. How about mushroom?

Cut up mushrooms (punnet full), and add a cut up onion. 2 pts of milk. Boil for about 20 mins. Then blend.

I love this soup and it is easy to make. The hardest part is cutting up the squash.

BUTTERNUT SQUASH SOUP

Peel and dice a large squash into small cubes ~chop a large onion and fry in oil until soft. Stir in squash, add salt and pepper and add stock (I use chicken) approx 1~2 pints and cook until soft. then blend, pour back into pan and reheat. take care not to add all the liquid it depends how thick you want it to be.

I just love homemade thick soup...

My blender died recently and I really need to get another one but there are so many to choose from... can anyone recommend one!
