Thumbs up Healthy Southern Cooking Ideas

I love southern cooking. Anyone have some healthy versions? Here is one that I recently made up.

I heat some olive oil and brown some turkey sausage and cook it through. Then I toss in some garlic real quick. Then I add 2 bunches collard greens, and cook them until wilted. (Not totally limp with nutrients cooked out). I then add 1 can chicken stock and two cans beans. I LOVE Glory black eyed peas or red beans. They are already seasoned. I cook all that together till some of the stock cooks down and everything is heated through - about 10-15 min. It is fast and good. You can add brown rice or some good whole grain corn bread and I feel totally at home It's good on it's own too!

While on the south beach diet I made the recipie for suprise mash potatoes. they were suprisingly good. anyhow you mash up boiled cauliflower , 1 head make sure its fresh, frozen has a grittier texture. after its boiled soft you drain it, and then blend it up or mash it with sour cream, you can add bacon bits or green onions or whatever else you would add to mash potatoes . it was really good with some low carb salisbury steak and gravy, a bit watery if you dont mash em thick and really drain the cooked cauliflower good.

mutivitamin,zinc,and just added desogen bcp for my acne.hope i clear up.

It won't be as good, but make sure not to overdo the salt. I made that mistake with the gravy. Wheat flour seems to hold the salt taste more than white flour. Let me know if it works. DH would love that!

You can also use crushed pork rinds for a low carb chicken fried steak. Just coat the steak (or chicken) with the crushed rinds and cook as usual...yummy!

Ooh, ladies, your ideas sound yummy. Any idea how many calories there are in cornbread? I love making (and eating!) it but I bet its full of calories

Me - 20s
OH - early 40s

TTC #1

Blood work showed no ovulation, ultrasound showed no visible cysts but ovaries that are slightly enlarged.

We have now been refferred to the infertility clinic, our appointment is 19th December. Wish us luck!

OH is having a S/A done in October also.

Desperate for a baby of our own!

I tried brown rice for the first time and surprisingly I liked it the brand I had came from Uncle Ben's
