Thumbs up Healthy vegetarian recipes?

My doctor tells me that losing weight can reduce the symptoms of PCOS, so I'm trying to eat better food. I'm a vegetarian and I get bored with veggies and whole-wheat pasta, so I'm looking to expand my repertoire. Does anyone have any good, relatively easy, healthy vegetarian recipes they'd like to share? I'd appreciate it tons. =)

welcome to sc well, this is a recipe that i like: lentil and tomato soup. Basically i get 2 tins of tomato in juice, add some veggie stock cubes, red lentils and simmer them all together for about 1 hr. There is a website that a cyster recommened to me - here is a link

There are a thousand delicious veg recipies out there. I have been a vegetarian for 13 years. I cook almost everything the same as I do for the rest of my family (they all eat meat) I just substitute Yves ground round or tofu in the place of meat. Sometimes I get sick of cooking 2 meals everynight and the kids dont even notice they are eating tofu!

Default amazing cookbook for vegetarians

How to Cook Everything Vegetarian by Mark Bittman. It is freaking fabulous.

I also love the classic Vegan with a Vengeance and Veganomicon is a new one by the same author. Even if you are not a vegan, those two books offer amazing yummy recipes. I do not eat cow dairy, but I am not a vegan.

There is also a really good book for mediterranean cooking in a vegan style. If you are a vegetarian but not a vegan, you can always just add some lowfat cheese to the recipes as desired. It is by Donna Klein and I think it is called The Mediterranean Vegan Kitchen.

Hey,


I have a delicious recipe:


Mixed Bean Chilli (Serves 4)

1 tablespoon olive oil
1 onion, chopped
1 clove garlic, crushed
1 red pepper, chopped
1 green pepper, chopped
1 red chilli, deseeded and finely chopped
1 x 400g can of butter beans, drained
1 x 400g can of red kidney beans, drained
1 x 400g can of chickpeas, drained
1 x 400g can of chopped tomatoes
2 tablespoons tomato puree
2 tablespoons fresh coriander, chopped
  1. Heat the oil in a medium pan, add the onion, garlic, peppers and chilli, fry for 2-3 minutes until beginning to soften.
  2. Add to the pan the beans, tomatoes and tomato puree.
  3. Bring to the boil and simmer for 10 minutes. Stir through the coriander and serve with rice (basmati for Low GI).
If you don't like the pulses listed or you want to vary it, just replace them with the same weight of other pulses, a can of already mixed beans would make a nice change.

I don't add the coriander or use the chilli (i use chilli powder) and its still scrummy!.

Whilst on a break from treatment: June '09: first natural ovulation after a teeney bit of acupuncture...BFN.

July '09: Trying a more natural approach...coming off Metformin, starting acupuncture, low GI and exercise.

If you like mexican food, one of my family's favorites is black bean tacos. I came up with this when I was thinking about going vegetarian. You'll need:

2 cans of black beans (drained & rinsed)
1 can of diced tomatoes w/green peppers & onions (Hunts or Del Monte)
2 ears of fresh corn kernels (best) or 1 cup frozen corn

Add these in a pot and heat. It's that easy! This is good even without seasonings as the canned tomatoes add flavor or you can use salt, pepper, garlic powder, cumin, & Adobo.

For the taco shells, I like to fry (in Smart Balance oil) corn tortillas. The best brand is El Popocatepetl. They're sold in the mexican stores.

For the toppings, I use colby jack cheese, shredded lettuce, & my family likes avocado.

I always serve this with mexican rice or fideo.

question for u, where do u get your proteins? i am currently down to eating fish, no pork, beef, chicken or turkey, but i worry about proteins.

You can get the book How to Cook Everything Vegetarian It is great with more than 2000 recipes, most of them are simple to learn. Including salads, soups, eggs and dairy, vegetables and fruit, pasta, grains, legumes, tofu, breads, condiments, and desserts. I like it very much each weekend I will try some of the recipes on the book.

Recently (well, almost) diagnosed with PCOS. Got the cysts, odd bleeding, not too many of the classical symptoms. They want to put me on BC (of course), but I am very interested in dietary fixes.

As a veggie, I've gotten the majority of my protein from soy for quite awhile. I've been reading this book about ovarian dysfunctions, and the author suggests that soy and other phytoestrogens are bad for someone with PCOS. Still trying to digest the info, so I can't really elaborate just yet. Has anyone else heard something similar? Where can one get adequate protein from other than soy? How much protein is adequate? What other dietary changes might I be looking at?

I've read A LOT of advice - low carb, no sweets, no caffeine, no nicotine.
Must I give up all my vices?

A little bit sad.
