I am not vegan but I did decide to start eating several meals a week that were vegetarian.

Last night I made whole wheat spaghetti with basil pesto sauce and mixed in a little sour cream and fresh tomatoes from dads garden for a little extra flavor.

It was wonderful. I think I can start substituting like this. Giving up meat is a hard thing for me but I know it will be worth it in the end.

those recipes and links all look great..thanks everyone! I have been a vegetarian for a few years now, and it is really difficult trying to find things to eat. I have high blood sugar and PCOS...and I get sick of eating the same few things all the time.

I have tons of veggie recipe resources and have never really had trouble finding things to eat, even when I was living in Budapest which is not the most veggie friendly city.

I am so glad that I found this thread as I am vegetarian as well but sometimes struggle with finding a lot of options for what I can eat. Some of the websites look so good! Thank you!!!
