Exclamation Help!

I have IR and am suppose to be watching my carbs (yeah right) but all of the recipes I have found do not even sound good...help...
Anyone have any recipes that are worth trying?

chicken recipes would be great!

I make chicken parmesan without carbs. You dip the raw boneless, skinless chicken in milk, then in a mixture of parmesan cheese, oregano, salt & pepper. Then you brown it in a touch of olive oil, the place it in a baking dish and bake for a half an hour.

Also I grill alot of chicken. I premarinate it with teriyaki sauce or other concoctions...low fat italian dressing is good...I even freeze it in marinade, then grill or bbq...easy and tastey.

Another simple thing with chicken is stir fry. I stir fry the chicken in a bit of sesame oil with a touch of salt and pepper along with garlic and green onions, then I add frozen stir fry veggies, when they are just about done I put a bit of oyster sauce on them and voila!

Have you looked on Allrecipes.com? They have a low carb section and all of the recipes have a full nutritional rating. You can even customise them for any amount of servings. Also, shake off the sugar is a good place to look. I have used loads of ideas from there.
When you cook a chicken, if you ease your fingers between the skin and the flesh, poke cloves of garlic in there, on the breast and on the leg, also slices of lemon, before you roast it. If you are watching your fat intake, you can always skin the chicken before serving it. The garlic isn't strong when you roast it slowly, it goes very sweet and creamy.

I do modified low-carb, but there is a recipe for a no-crust, no sugar added pumpkin pie recipe that was delicious. It helped get me thru Thanksgiving year before last

SPLENDA PUMPKIN PIE

1 (15 oz.) can pumpkin puree
1 cup SPLENDA
1 and 1/2 tsp. pumpkin pie spice
1/8 tsp. salt
1/2 cup milk (I think I used a whole cup of milk)
1 egg (it was better without the egg, I thought)
3 Tbsp. heavy cream (I skipped the cream)
1 Tbsp. vanilla

Preheat oven to 400 degrees F.

Mix all ingredients & pour into oven safe pie dish that has been sprayed with cooking spray. Bake in preheated 400 degree oven for 30-45 minutes. Test center with toothpick for doneness.

I got this recipe offline, and it looks like the one we used 2 years ago, but I may have a couple of things wrong.

check the net,,, i have found a ton or recipes,,, i usually just cook, meat, usually on the BBQ (steak/chicken/pork chops) and a veggie for dinner,,, a small salad and usually broccoli with chesse melted on it..... meat loaf is good.... hamburger without bun.... chicken parm,, they do have low carb chicken breading you can buy.... there are a few recipes for low carb pizza on the internet, i have tried a few (pretty good).....
the low carb tortillas are great (i think they are about 10 net carbs)....you can use for pizza also,, it's pretty good,
or make a quesatia (sp?) chicken, salsa and cheese, fold the tortilla and bake in oven
great for lunch, to make any kinda sandwich on
cream of cauilflower soup is also good,, if you use cream to thicken
