I'm taking metformin and was recommended by my doctor to go on the GI diet which is fair enough but at the moment I'm going through a lot of s--t. As well as PCOS, I have an RSI which is pretty bad at the moment and there's stuff going on at home and at work.
My point is that at the moment I can't even nearly bring myself to cook 'proper' food, including low GI food. I'm living on absolute rubbish at the moment, my diet conists of normally something with chips (fries for those across the pond), todays appetising selection included aforementioned chips, a processed burger and spagetti hoops. Last night was a variation on the theme.
I can't summon the energy to cook, I'm not eating until about nine at night when I would always eat about half seven before everything went t-ts up in my life. I think that the only reason I'm eating at all is because I think I should eating, not that I'm hungry or really want to eat. If you knew me then that would be a shock, I live for food normally!!!
I think I've ranted on enough and should just get to my point which is can anyone suggest anything that I can eat that takes absolutely no effort and is preferably GI friendly.

Dried fruits and nuts. Pre-made trail mix. I always keep a bag or two of these in my office at work and sometimes just have that for lunch when I'm busy. They don't need refrigeration and take months to go bad.
Also fresh fruits and veggies. I discovered that the reason I'd never liked eating fruit much before was because I couldn't eat it cold-- room temperature it tastes better to me and doesn't hurt my teeth. (For some reason I always liked frozen peas straight out of the freezer though...)
Whole grain cereal. All it needs is milk. Or you can just eat shredded mini-wheats out of the box.
Pre-bagged salads.
With a little more effort, microwave sweet potatoes. Popcorn, although not good for you, is not all that bad if you stay away from the ultra buttery movie theater variety. Some microwave dinners are healthier than others too.
I hope things start looking up for you. No effort eating doesn't have to involved spaghetti-o's.
Tuna or chicken salad on whole weat, stone ground bread.
Baked (or microwaved) sweet potatoes/yams. They are much better than regular potatoes when you are watching your carb intake.
Fruit salad with cottage cheese or yogurt
Chili and a salad
Tomato soup with grilled cheese on whole wheat, stone ground bread
And my favorite, breadless burgers. I take two hamburger patties, cheese, mayo, mustard and ketchup and eat it with a fork. One restaurant here serves them and wraps them in lettuce and calls them low-carb burgers.
Just want to say thanks for the great suggestions, I'm going to have to try some of these ideas. Thankfully I'm feeling a bit better now and can cope with cooking some nights. But there are still those days when it's just too much effort for me. I love the idea of breadless burgers, it sounds really good, I'm going to try that soon!
