high-fiber summer salad (yummy!) This is great for those days when it's just too hot to cook but you want something substantial that is also healthy!
Black Bean Salad
2 cans black beans
1 can corn niblets
1 red pepper, cut in chunks
1 yellow pepper, cut in chunks
1 green pepper, cut in chunks
1/2 red onion (optional for me), diced
1 clove garlic, crushed and diced
2-3 oz. cheese of your choice (pepper cheese is great!), diced
splash olive oil
splash balsamic vinegar
Just throw all of the ingredients into a medium bowl and mix until all of the ingredients are covered in the "dressing". The recipe makes 4-6 large servings as a main course or a lot more side dish servings. Great for potlucks!
The salad is really tasty and ultra filling. I calculated that there are about 8-10 grams of fiber per 100 g serving and probably not too many carbs. Enjoy!
