Default Homemade salsa?

Do any of you have recipes to make your own healthy salsa? What do you use? How do you make it? Can you make a big batch of it and freeze it? This is something I have been wanting to do for a while and thought maybe someone here could help!

I am born and raised in Montana and i miss having a garden sooooo much! (i know live in Phoenix which is horrible!) Where in ND are you from? I am cracking up because you seriously have a cooking bug....i love to cut up tomatoes and just put salt and pepper on them! oh gosh i miss that....how sick am i? its 3:45 in the damn morning and i am visualizing a beefy red tomato with salt and pepper!

Have you tried them sliced w/ mayonnaise on them? Better than a beef steak, IMO!

I grew up in New Leipzig, since graduating from high school I have also lived in Bismarck, Hazen, Fargo, and now my husband and I live in Forman. I've been in North Dakota my whole life, and I love it here. In my email message it said you were born and raised in ND, but in your post it says you were born and raised in Montana, so where did you grow up?! We planted 6 tomato plants, and I'm not real sure why because I'm the only one that eats tomatoes! HA! I have had at least 20 tomatoes on my counter at a time, so I am constantly giving them to people. Now I can use them and this way my husband will help me eat them. And you are very right, I definately have the cooking bug! HA!

I'm so jealous of you all! I can't wait until we move to Texas and I can have a garden again. Tomatoes just don't do very well in an apartment and it's really difficult to find good ones at the supermarket-- they're mostly shipped in from CA or overseas.

O.K. I am not sure if this is homemade enough - but it is a very quick salsa- much better than the salas you buy. I use a can of the milder rotel canned tomatoes- or you could usse the regular hot kind if you can handle the heat. I drain off the juice - but keep the juice for thinning - I put the rotel in the blender alond with a handful of fresh cilantro and a couple cloves of garlic and a squeeze of lemon or lime juice-salt and pepper - just blend until the thickness you like -add juice to thin if you need to. I love this it tastes more like the salsa you get here in Texas at the Mexican restaurants than say Pace or a store bought sala.

Ok I make my salsa just by looking at my ingredients and tasting of course. I use fresh red tomatoes, white onions, a clove or two of garlic, jalapeno peppers (seeded and cleaned), lemon juice and salt. Put it all in a blender and enjoy! You can leave out the jalapeno if you don't like heat and you can add more. You can also add fruit to this recipe and lower the salt if you like that sort of thing. I am more old fashioned.

Be careful with that cilantro! Too much and your salsa will taste soapy! We eat a restraunt here and ever so often their homemade salsa tastes soapy and its the cilantro.
