I just had the most DELICIOUS burger. I think it would work for low-carb dieters since I ate it without the bun.
Saute chopped onion in some Smart Balance (like margarine, but supposedly good for you) until they are almost done. Toss in fresh, sliced mushrooms, sprinkle with pepper and a little salt. You will have to keep stirring this pretty much constantly so it won't burn, but it doesn't take too long. If you have some balsalmic stuff a splash is good, but I had it without tonight and it was great.
Pile the mushroom/onion mixture on top of the already cooked hamburger patty and top with provolone or swiss cheese. Oh, the cheese melts in a few minutes and it's heavenly.
Just wanted to share...I could almost go for another one. LOL
