I have never made any candied yams and this year I wanna make some. Do any of you have any good but easy recepies?

I don't have any either but i would love one. A friend of mine made one at a potluck many years ago that was mashed with pecans in it, does this sound familiar to anyone? I would say the consistency of them was similar to mashed potatoes but Oh so much yummier, so if anyone has a recipe that sounds like this PLEASE post it.

I usually use cream(maybe 1/2 cup)brown sugar(mix in with cream)butter and then i put some marshmallows on top or u can use either marshamallows or brownsugar then i bake it...it is so good!

Here is the recipe I am making this year. It is "healthier" and designed for low-GI diet (South Beach).

3 or 4 large sweet potatoes
1/3 cup Smart Balance or other 0 trans fat margarine
1 cup brown Sugar Twin OR 3/4 cup Sugar Free maple syrup

Peel and cut potatoes into thick slices. Boil until not quite done. Drain and put them in a baking dish. Heat butter and sugar or syrup; pour over potatoes and bake at 400 for 30-40 minutes.

This might be too late but maybe you have turkey for Christmas too

This recipe is so good that my aunt has been begging me for it (along w/ a butternut squash recipe as well)!

Sweet Potato Casserole
Yields 8 servings
5 sweet potatoes, sliced
1/4 cup reduced fat margarine
1/2 cup packed brown sugar
3 tablespoons orange juice
1 pinch ground cinnamon
1 (10.5 ounce) package miniature marshmallows
1. Preheat oven to 350 degrees F (175 degrees C).
2. Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil, and cook until tender, about 15 minutes. Remove from heat, drain, and mash.
3. Place mashed sweet potatoes in large bowl, and use an electric mixer to blend with the margarine, brown sugar, orange juice, and cinnamon. Spread evenly into a 9x13 inch baking dish. Top with miniature marshmallows.
4. Bake for 25 to 30 minutes in the preheated oven, or until heated through, and marshmallows are puffed and golden brown.

You can easily make this in to a diabetic-low GI friendly recipe by making the splenda brown sugar & omitting the marshmallows or using less than the whole pkg (it's a ton when using the whole pkg).
