OK ladies it seems like we are all on the same page today with it being a new year and all we want to lose weight but I have a serious problem I Don't like Vegetables at all I really don't try any new vegetables because I don't know how to season and cook them to make them taste good I only eat corn and sweetpeas and just started eating green beans since I learned how to make green bean casserole. I really need to increase veggies in my diet my son will be a year old soon and I want him to learn good eating habits young when we were little we never ate veggies either my mom only made canned corn and sweet peas either individually or mixed together and carrots if she made a pot roast. I would love vegetable recipes for different types of vegetables from broccoli-squash and anything in between I started giving my son green beans and he loves them he's 9 months old so I am taking it kinda slow introducing him to things but I also need to do it for me.

Not exactly a veggie recipe..... but my family and I love the birdseye steam fresh veggies. 0 hassle and a quick fix to throw some veggies in the microwave and add together for fresh veggies with any meal.

I buy them steamfresh veggies but only the corn, and sweetpeas because I'm afraid I won't like the other ones I am not a big fan of veggies unless they have some flavor to them sad to say but it's true I'm terrible when it comes to eating vegetables. Thanks ladies.

The one that is called asian medley (think the brand name was actually birdseye and not steamfresh on them) it is seasoned really well and great along with some chicken (marinated in teriakyi it would have been even better). Dbf and I fought over the seconds....
There is a good idea...sugar snap peas are crunchy yet sweet. My mom is a diabetic and keeps em in the fridge just to munch on. Also at home when I have the money - I premake a veggie tray of baby carrots,cauliflower,broccoli,celery sticks and some ranch dressing or some kind of dip in the fridge....and munch on that.
You can hide alot of veggies by making vegtable soup or fresh chicken noodle soup.
Salads are your friend because you can add anything in there and change them up. I made a salad up the other day that was awesome. I threw together some arugula (taste peppery),slivered almonds,tomatoes and made a vinegrette out of some honey mustard and a shot of olive oil and placed it as a bed for some of my tuna fillets. It was awesome.
I also love throwing some spinach in a pan with a small pat of butter and salt and pepper and then cook some "scrambled" eggs in there with it. Taste great!

I just made a really good version of "eggplant in garlic sauce" . it usually has sugar and corn starch, but i am on a low-carb diet, so i improvised.
Ingredients:
2 asian eggplants, sliced into sideways medallions. Not sure how to explain this... just slightly slanted medallions, I guess... shaped like almond slivers.
2-3 cloves of garlic, crushed
2 tsp grated ginger
red pepper flakes to taste
dash of vinegar (white or asian)
dash of soy sauce
I begin by sauteeing the ginger, garlic, and red pepper flakes on high flame in about a tsp of olive oil in a wok.
After 2-3 mins it will become soft and combined. Throw in the eggplant at this point. Cook it for a while while it softens, around 3 minutes, stirring the whole time. Then throw in a dash of vinegar and soy sauce and keep cooking, stirring constantly on high flame until the eggplant is tender and can be easily pierced. Throw in very small amounts of water a couple of times if it seems to dry, like 2-3 tblsp at a time.
Definitely a quick recipe and pretty healthy. Tastes good too. I made basmatti rice for my DH to go with this, but had it with some cabbage myself bc of the aformentioned diet.
1. No canned stuff...period. Fresh or frozen only. Canned stuff is too high is sodium and if you compare them to fresh or frozen you can see a clear different.
Try going to a website like Martha Stewart's or other popular chefs and cooks. I say Marta because he site is pretty extensive and you can search by typing in specific key words.
Also in most grocery stores they have FREE recipes on racks in the produce isle. Grab those and give them a try.
Don't be afraid to try something new. Veggies are yummy just experiment and stay away from canned stuff...

You can cook a lot of veggies by roasting them in the oven and they are yummy that way. I use almost any kind of vegetable--broccoli, sweet potato, onion, cauliflower, asparagus, carrot, etc. Just adjust because the long-cooking veggies need to go in first if you do a mixture. I sprinkle them with salt and pepper, mince a couple of garlic cloves on top, spray with a little olive oil, and roast until they're tender. You can season with other things if you want (rosemary is tasty; parmesan cheese is good).
I thought about you the other day...I was watching food network and giada had what looked like a great idea to throw some hidden veggies into your diet.
She took zuchinni and eggplant and cut them on an angle (to look like peices of slivered almond) and some red onions and threw a little bit of olive oil and salt and pepper on them and grilled them to perfection...then she added some sliced tomatoes,fresh mozarella,and pesto to some bread,grilled it and made on of the most enticing paninis I have ever seen. MMMMMM

I too am a very picky veggie eater. If you don't like something cooked, try the same veggie raw. They can taste totatly different. I grew up eating canned corn and green beans with the occasional fried squash and okra. Not exactly healthy.
My favorites now include grilled okra, zuccini and squash prepared many different ways, asparagus, raw broccoli and raw cauliflower, all kinds of salads, snow peas. My point is dont be afraid to experiment. Some things will be others and others will be gross (just toss those out).
I LOVE sweet potato fries. Either slice sweet potatoes like french fries or buy the frozen ones at the store. Throw the fries in a gallon bag with a table spoon of olive oil, paprika and salt & pepper to taste. Shake the bag to coat the fries. Place on a baking sheet (I use a rack on top of a baking sheet for added crunchiness) and cook at 425 for about 10-15 minutes. Yummy!
Also, I make a broccoli and cauliflower salad that is awesome. Chop broccoli, cauliflower, and red onions into bite-sized pieces and throw into a bowl (that can be covered with a lid). Add cherry tomatoes that have been cut in half. Coat the vegetables with a balsamic vinegarette (1 part balsamic to 2 parts olive oil). Let the veggies sit for 2 to 24 hours. YUMMY!
Also, you can try to make different salads. Experiment with different lettuces, tomatoes, bell peppers, cucumbers, etc. Also, try different homeade vinegarettes.
A great website I have found for recipies is 3fatchicks.com. Go to their forums, then to the south beach diet recipes. Also, search foodnetwork.com for more amazing recipes.
Try veggie soup (see WW soup recipe thread on this forum), frittata (sp?) or omelettes, pizza toppers, adding some to sauces, or using a yummy dip with them?

Fresh carrots are yummy...the kind with the greens still attached. They are much sweeter than the ones in the bag. I cut them up and dip into a little ranch dressing (low card/low sugar). Delish!
