Sorry if this has been posted before, but seeing how it's summertime and all, I hope someone has a good answer for me.
This whole low carb ice cream thing is just no fun. I've tried the Breyer's ice cream bars and cones, even went to Baskin Robbins tonight and theirs was about the same. Kinda icy, and kinda flat flavor. I had a regular lite ice cream bar the other day and it was downright decadant.
Anyone have either any recipes or suggestions for decent low carb ice cream?

It's not actually ice cream and not 100% sure bout the carb count in it but I do know that it a wonderful alternative to icky 'good for you' ice cream. take the frozen fruit of your choice (berries are good, they come in pre-packaged bags and are all kinds of berries) then top the frozen berries with vanilla yogurt (it's even good with the low carb yogurt but any flavor other than vanilla and its not as good) and finish it all with some granola (kellogs makes a cereal that is a granola based cereal but has some more flavor to it than plain granola, i think it even has some almond slivers in it). After all that its up to you if you mix it all up (it gets the yogurt kinda frozen so that it has more of an ice cream texture) or eat it in layers. My mom and I fight over the best way to eat LOL. You may have to let it sit out for a few minutes so that the berries kinda thaw and the yogurt gets kinda frozen otherwise its hard to eat the fully frozen berries.

Blue Bunny has the BEST no sugar added icecream. Bryers SF is nasty stuff. We get Blue Bunny inthe carton, but also get the Blue Bunny on a stick. Klondike has a good no sugar added ice cream bar that is good- Slim a bear.
Ice cream all by itself, in glorious full fat, so long as you get one that isn't crazy with the sugar... is glycemically balanced. Just don't eat a full pint! I lost quite a bit of weight while still allowing ice cream in my diet (not the cone, and not huge amounts). Way better than when I was doing the low-fat thing and having sorbet. Also, I think it's worth it going for a brand that has actual sugar and not high fructose corn syrup to sweeten it. I tend to get sugar spikes and jitters from low-fat ice cream, and I think it isn't as balanced.
I also second the smoothie idea. I like those as much as ice cream. With or without the yogurt. Yum!

I noticed that when I moved from Arkansas to Ohio I can't find Blue Bunny anywhere. DH LOVES, and I mean LOVES, the cookies and cream from Blue Bunny but alas, he has to do without because I can't find it up here....
I heard the skinny cow is awesome. I haven't tried it yet. Also I think Chapmans makes a no sugar or low sugar brand for fudgecicles, popcicles, and icecream.
