It's that time of year again - those days where we go off our diets and gain a few lbs. because we eat all those rich goodies and carb-loaded foods thinking, "Oh, it's the holidays! I'll go back on my diet afterwards." That's what I always do, anyway. :o But, what can I have for Thanksgiving dinner if I can't have stuffing, mashed potatoes, candied yams, rolls, corn, peas, pie.....??? That leaves pretty much one thing - the turkey! LOL!
Is there such a thing as a low-carb Thanksgiving Day menu?

I hear you! I love the Traditional Thanksgiving dinner, and I intend on having a bite of all that I want! lol!
How about green beans with slivered almonds & a small amount of butter? Brocolli & Cheese casserole is good too. Sweet potatos are lower in carbs then potatos, just skip the marshmallow topping! Salad is great too, and I plan on bringing a loaf of low carb bread to have too.
Bring a low carb cheese cake with you, and you can even have dessert!

Those are great ideas! I love the sound of the broccoli and cheese casserole - my DH will also love that. He'll eat anything as long as there's cheese on it! LOL! May I please have that recipe?
Reading your post reminded me that there are actually a lot of things I can eat on T-Day, I guess I was just hoping for an excuse to go off my diet! :o

I haven't tried this recipe so I don't know how good it is.
Pumpkin Pie:
Single pie crust 9"
1 can pumpkin (16 ounces)
1 can evaporated skim milk (12 ounces)
3 eggs
18 packets sweetner
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
Beat pumpkin, milk and eggs till well blended, beat in remaining ingredients. Pour into pie crust. Bake in preheated 450 degree oven 15 minutes. Reduce heat to 350 degrees and bake, until knife inserted near center comes out clean, about 40 minutes. Cool and serve. Makes 8 servings.

Classic Almond Flour Pound Cake
Ingredients:
1/2 cup butter (1 stick) softened at room temperature
1/2 cup full fat cream cheese
1 cup Splenda
5 eggs, at room temperature
2 cups almond flour
1 teaspoon baking powder
1 teaspoon lemon extract
1 teaspoon vanilla extract
Cream butter, cream cheese and Splenda well. Add eggs, one at a time, beating well after each. Mix almond flour with baking powder and add egg to mixture a little at a time while beating. Add lemon and vanilla extracts. Pour into greased 9"-10" Springform pan, ring pan, (or 9" round cake pan) and bake at 350°F for 50-55 minutes.
You can change flavors for this cake by using different extract flavors and even food color if you like!
Makes 12 servings. 6.1 effective grams of carbohydrate per serving.
