Default Ideas for lunch?

Hi everyone! For some reason I can never think of a low-carb meal to eat for lunch. I am great with breakfast, snacks, and dinner, but never lunch! Also, I am not a big meat eater at all....so any suggestions with beans, eggs, or just a few bites of meat?

*steamfresh veggies should be one of your new best friends since they have individual packets now...they are awesome.

* I made omlets ahead of time if I knew it would be a busy day. One of my favorite omlets is just eggs, spinach, and cheese...that might be helpful since you said you aren't much on meat. If you are super hungry you can throw in some low carb toast.

*you could make some vegtable stir fry ahead of time and just eat the stirfry and nix the rice or if you have to have rice - go for the brown kind.

*sammies with low carb bread or wrapped in lettuce (depending on what your desired carb intake is)

*baked chicken or porkchops w veggies

*tuna salad or chicken salad inside a tomato bowl

*salads

*tuna or salmon filets that you buy in a pack buy the canned tuna in walmart (my fave is lemon pepper) and veggies.

*think chicken fajita nachos from your fave resturant just subtract the nachos....you could so do this with just meat or I personally use mission low carb tortillas or whole wheat tortillas (both are low carb)

*alfredo/brocooli alfredo with low carb pasta (my fave is dreamfields)

These are just a few suggestions...I know some of them are with meat, but maybe there is something in there that will help.

For added motivation...I know that low carb does work. I lost 45 pounds on it but gained it back when I caved to the temptation of bread!

My dad has been lc'ing for about six months now and has lost over 75 lbs.

i like tuna in half a bell pepper (usually red or orange, not green)

lentil soup is also a good option

sometimes i do coldcut+cheese roll ups (no bread)

Yes that two links can be helpful to you, and I think you can try some easy vegetarian recipes, I don't fond of meat either, and I found myself a vegetarian book the Vegetarian Meals For People On-The-Go, I tried some of the recips, they are super easy and very tasty, and the preparation times in the book (generally 10-20 minutes) are very accurate. It also had great ideas on how to stock your pantry with healthy choices, along with kitchen essentials and suggestions for the person seriously looking to change their eating habits and lifestyle to live younger.
