Hello, my name is Gabby and I've been a lurker to these boards for a couple of days now.
I was following the The Insulin-Resistance Diet pretty religiously after I was diagnosed with PCOS in the winter of 2005. When I was diagnosed I was in Switzerland, the doctor only spoke french. Honestly I found out I had PCOS using WebMD, but the doctor confirmed it. After taking an ultra sound she said I had 10-15 cysts on each ovary. Eeek.
But by the summer of 2006, I was eating so many whole grains I found out I had Celiac Disease (Wheat Allergy). My mother has it, I knew I'd end up getting it. But those few months were I followed the PCOS diet I felt great.
My goal in life after finding out I couldn't eat gluten was to make food that tasted good, not necessarily good for me. And gluten free food is horrible for your body, lots of carbs, tons of fat, lots of salt.
After doing so much research on PCOS it seems that people either start down the pre diabetes road, or high blood pressure and heart issues road. I had thought for so long I was on the pre diabetic road that I was much more worried about blood sugar then fat and salt content. Ends up I have pretty bad Hypertension.
So I'm starting all over, rethinking my diet, and trying to get out more to exercise then stay home and play video games. I thought I'd join the forum so I could get more info, and maybe find some more gluten intolerant people who also have PCOS.
It's been suggested that I may be gluten sensitive as well.
I don't really follow a gluten free diet. I follow more of a vegetarian-style diet. I eat a lot of vegetables, fruit, and protein like venison, pork, eggs, and fish. I also endulge in Organic peanut butter, which goes great with apples, celery, carrots, and bananas.
I've had some gluten free products before and I've noticed they load them down with sugar. So, for me, I just stay away from any kind of refined sugar products. I find that I really have no desire to eat any kind of carbs and the only things I crave are eggs, if I go a long time without protein.
If I go back to any kind of wheat product or dairy product, I get a real bad stomach ache with bloating, gas, and intestinal disturbances
On a sidenote, which video games do you like to play?
My husband got me hooked on a MMORPG a year or so ago, and it wasn't until recently that I had to cancel my subscription because I was spending WAAAAY too much time in front of the comp.

I have never been a fan of eating a lot of vegetables. I really need to get into that. I eat tons of fruit though, and at least 1-2 apple a day. Because my mom lived gluten free for so long I saw all the horrible foods she ate. And once I became gluten intolerant, I decided to make food that actually tasted good. My wedding cake was gluten free, she actually cried the first time she ate it because it tasted like real cake.

I was a huge WoW (World of Warcraft) player back when I was traveling as a missionary. Since I use a mac and do web design, it was perfect to pass the time when I wasn't working. It became such an addiction I had to let it go. *tear*... I played Guild Wars for a while, but didn't really enjoy it. FF 11 was horrible. I wanna try Age of Conan but I'm to poor.
Mostly I've been playing console games, my husband is a manager at a Gamestop so we have all the current systems. Persona 3 has been my most recent addiction, started it right after finishing MGS4.
Finally got internet for my Mario Kart on the Wii. If anyone wants to play with me my friends code is 4640-0577-0415. I traded in SSBB towards Disgaea 3, so I don't have that anymore. x.x
That's awesome about you making your wedding cake and it tasting good. Sounds like you have a knack for making traditional food in a new way.
Veggies are a hard one to really get in to. It's a struggle to find decent veggie recipes.
I tried WoW for a little bit, but my DH and I are big DAoC (Dark Age of Camelot) players. He still has his account, so I occasionally get on and mess around. I haven't tried Guild Wars though. And I've heard A LOT about Age of Conan. Our guild on DAoC depleted drastically because they all went to play AoC. One of our guildmates told us in order to have a lag free game play on AoC, you really needed to have about 8G on your comp. My hubby only has 4G, so he decided against it and just stuck with Camelot.

It was a great cake! Well it was cupcakes... and since I can't really post links until I post 10 posts, you can't see it. So sad.

I wish my husband would play MMORPG's with me. He totally hated WoW. But he's around a lot of crazy retarded people who can't live more then a few minutes away from their games, so I guess I can understand. If I worked at a video game store I'm sure I wouldn't play as much as I do.

I think it's how all of my gluten intolerance was triggered, because I followed the PCOS diet and ate a lot of whole grain wheat. *sigh* But I should have been eating more vegetables anyway...lol
