After following the IR diet for a year or so (more or less, I've had my 'screw it' moments) I've come up with some fantastic recipes for my sweet tooth that don't require any 'wierd' ingredients and thought I'd share!
Peanut butter/chocolate cookies (yes, cookies!) My husband loves these too!
1c low-carb peanut butter
1c Splenda
2-3 tablespoons baking cocoa
1 egg
1/2 tsp vanilla
1/2 tsp coconut extract
Preheat your oven to 375F and mix all ingredients until well blended. Drop by 1" balls on an ungreased cookie sheet and bake 8-12 minutes. Watch them carefully! They burn fast and taste awful when they do! You want to take them out when the edges look dry and the tops mostly look dry, maybe a little shinyness in the cracks. They don't spread or puff up very much, so crowd 'em on the cookie sheet if you like

They're not bad right off the pan, but I think they're better the next day.
Chocolate cheesecake
2 blocks of 8oz cream cheese (I actually use the lower fat version with the funny name)
2 eggs
1c Splenda
1 tsp vanilla
3/4 tsp coconut extract
4 tbs of baking cocoa (or more/less to taste)
Crust:
1c ground pecans
2 packets Splenda
2 tsps ground cinnamon
Butter flavored cooking spray
Preheat oven to 375F. Line a muffin tin with papers and give a quick spray in each with the cooking spray. Mix up the crust ingredients and sprinkle the mixture in the bottom of the cups then spray again with cooking spray until the tops of the crusts are wet. (Quick bursts keep the crust crumbs from flying out at your face!) {Also, you can totally skip the crust if you want, just make sure to liberally spray down those liners!}
Mix the cake ingredients really well until smooth and pour into muffin tins about 1/2 - 3/4 full. Bake about 30 minutes or until toothpick/knife inserted into centers comes out mostly clean.
Chocolate "Mousse"
1 package of sugar free/fat free chocolate pudding mix.
1/2 container (regular sized) of Cool Whip Free/Lite
Make the pudding according to the pie filling instructions on the package (I use an electric mixer because otherwise it seems to come out a bit lumpy.) Carefully fold in the whipped topping and pop it in the fridge until it's set. I use Jello brand pudding and the entire batch has 64g of carbs, so for you folks on the IR diet you can, if you desire to make yourself ill

, eat nearly half the bowl at one time.
These are staples in my house because I have a sweet tooth to rival all sweet tooths! You'll notice I use coconut extract a lot, it's because it makes sugar-free recipes taste even sweeter and goes a long way in neutralizing that 'artificial sweetener' taste.
You can also play around with different extracts. Sometimes I add orange extract to the cheesecake and it's yummy!
